Steak Tacos with Roasted Corn + Chipotle Aioli

Juicy grilled steak with fresh roasted corn + a homemade chipotle aioli to give these tacos a creamy kick

You can never go wrong with tacos for an easy weeknight dinner, but I love switching out the traditional ground beef taco with something a little more elevated. These steak tacos are always my go-to because I can cook them up so fast on the grill or flat top.

 

Ingredients:

 

    • flank steak– or a strip steak

    • taco seasoning– I use my own homemade miz, but if using store bought, buy a good brand that is low in sodium

    • corn tortillas

    • fresh corn– frozen will work if you can not find fresh

    • mayonnaise

    • chipotle peppers– chopped or in adobo sauce (found next to diced chilies)

    • honey

    • dijon mustard

    • salt

    • garlic powder

    • avocado

    • cotija cheese

The Taco Seasoning: 

 

I always make my own and have it on hand. You probably already have everything you need, it’s just about getting the right measurements.

 

  • 2 tsp chili powder

  • 2 tsp cumin

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

Grilling the corn:

 

I love to use fresh yellow or white corn for this recipe. I know this is a little extra work, but it’s worth it. If you can’t find fresh, you can buy frozen and just cook it up on the flat top or in a pan with a little bit of olive oil.

I also like to cook the corn in the microwave for just a few minutes before adding it to the grill so that it is cooked and just needs a blackened crust- which adds so much flavor.

How to get this done in 3o minutes:

 

This meal does have a few more steps than some of the other 30 minute meals that I share and if you don’t have a flat top grill, it might be a little harder to knock this out super fast. 

 

If you do have a flat top, take full advantage of your space and cook it all at once. If you don’t you may need to call in some back up and have your hubby or someone grill the steak and corn while you cook the tortillas and make the aioli.

30 minute busy mom dinner series

I started this series thinking it would be a few quick and easy options for busy weeknights, but I really don’t see this series ever ending or at least anytime soon! 

obviously you don’t have to be a mom to make these meals and enjoy them, but I did set out with a purpose and that was to help moms feel a little less stressed in the kitchen when it came to putting easy + healthy meals on the table for their family!

Equipment

  • flat top grill or bbq grill

Ingredients
  

  • 1 1/2 lbs flank steak
  • 3 tbsp taco seasoning I use the my homemade recipe (recipe above)
  • 3 ears of fresh corn or 3 cups frozen corn
  • 12 corn tortillas

Chipotle Aioli:

  • 1/2 cup mayonaise
  • 1-2 tbsp diced chipotle peppers in adobo sauce
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • 1/8 tsp garlic powder
  • pinch of salt to taste

Toppings:

  • avocado
  • cotija cheese
  • cilantro
  • lime juice

Let's Make It
 

  • In a large ziplock bag or bowl, add the flank steak + taco seasoning. Let the steak sit for 20-30 minutes before grilling.
  • After the steak has marinated in the seasoning for just a little bit, start the grill and set the temperature to a medium high heat.
  • In the meantime wrap the corn in plastic wrap and microwave for 3 minutes.
  • If using a flat top, add some oil to the grill and place the corn on one side and the tortillas on the other. Flip the tortillas to brown each side and then move to the side to keep warm.
    If using a bbq, you can add the corn straight to the grill and make the tortillas inside on the stove.
  • Once the tortillas are done, you can continue turing the corn and add the steak to the hot side of the grill. Flip after a few minutes and continue cooking until you reach the desired temperature. I like my steak medium at 145℉
  • While the steak sits to rest, cut the corn off of the cob and make the aioli by combining all of the ingredients in a small bowl.
  • Slice the steak against the grain into small chunks.
  • Layer the tacos with steak, avocado, roasted corn, aioli, cotija cheese + cilantro.
