Creamy Chicken Chili Verde

One pot Skillet Creamy Chicken Chili Verde makes for an easy, flavorful dinner that comes together in 30 minutes- serve this over rice and top with avocado

Nothing says easy dinner like a one pot dinner!

 

I love green enchiladas, but they take so much work. Most nights I just want something easy to throw together and thought about just kind of deconstructing the enchilada and turning it into a skillet meal to serve over rice! 

 

This one comes together so effortlessly and my whole family really enjoys it. I do add jalapeno, so if your fam doesn’t like spicy stuff you can just omit the jalapeno and add a little extra cream cheese to mild out the heat from the salsa.

 

Ingredients: 

 

  • chicken breast or thighs- I used chicken breast, but I think chicken thighs would be amazing and so tender in this recipe!

  • green bell pepper

  • zucchini

  • onions

  • jalapeno- for added heat, totally optional

  • green chilis

  • cilantro 

  • onion powder

  • cumin

  • minced garlic

  • lime juice

  • cream cheese

  • sour cream

additional toppings:

 

  • serve over rice

  • avocado

  • red onion

  • cilantro

  • crushed tortilla chips

Added veggies

 

as always, I like to add veggies into this meal. I sneak them in whenever/however I can! Most of the time, my kids don’t even notice the or they pick around them, but at least I am giving them the option to try them! 

I think adding some roasted corn to this dish would be so so good and you could even serve this over cauliflower rice to make it keto/low carb.

Can I make this in the crockpot?

 

This could absolutely be made in the crockpot!

 

I would just add all of the ingredients, except for the cream cheese + sour cream into a crockpot, place on low for 6-8 hours. You can add the cream cheese + sour cream into the crockpot when it has about an hour of cook time left, then stir it all up to combine.

I started this series thinking it would be a few quick and easy options for busy weeknights, but I really don’t see this series ever ending or at least anytime soon! 

obviously you don’t have to be a mom to make these meals and enjoy them, but I did set out with a purpose and that was to help moms feel a little less stressed in the kitchen when it came to putting easy + healthy meals on the table for their family!

Creamy Chicken Chili Verde

Ingredients
  

  • 3 chicken breast (2-21/2 lbs) chopped into 1 inch chunks
  • 1 tbsp olive oil
  • 1 green bell pepper diced
  • 1 cup white onion chopped
  • 2 cup zucchini diced
  • 1 jalapeno (optional) diced
  • 1/4 cup diced green chilis
  • 32 oz green salsa chili verde or hatch green chili salsa
  • handful of cilantro almost a 1/4 cup
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tbsp minced garlic
  • 2 tbsp lime juice
  • 4 oz cream cheese
  • 1/3 cup sour cream
  • 2-3 cup cooked rice to serve with the chili verde totally optional, but this is what I like to eat it over.
  • avocado, cilantro, red onions for topping

Let's Make It
 

  • Add the chopped chicken into a large pan over medium high heat. Sautee for about 3-4 minutes before adding in the bell peppers, onion, zucchini + jalapeno. Let the veggies cook for another 2-3 minutes or until slightly tender.
  • Add in the green salsa, chilis, onion powder, cumin, minced garlic, lime juice + cilantro. Stir until everything is well combined and then cover, turn the heat down to medium low and let it simmer for about 10 minutes or until the veggies are tender and the chicken is cooked all the way through (165℉).
  • In the meantime cook your rice.
  • After about 10 minutes, add the cream cheese to the pot, cover and cook for another 2-3 minutes.
  • Add the cream cheese in and stir everything together until the cream cheese is well distributed.
  • Serve over a bed of rice and top with avocado, cilantro + red onions!
