Apple + CHeese + Ham Breakfast Sandwiches

All of the flavors of fall coming together in one tasty breakfast sandwich, I promise- you will love these!

OK OK Just hear me out. I know what you are thinking- apples + eggs?

And my answer is yessssss! These are 12/10 so so good!

I don’t know why when the leaves start to fall I just want to add apple to everything, but I do. Since the apples are covered with the provolone cheese, the actually do not turn brown and they do get slightly cooked in the air fryer/oven. I promise you will love it. If not, just leave them out!

Ingredients:

 

  • eggs
  • apples
  • provolone cheese
  • thyme
  • english muffins 
  • sliced ham

The english muffins-

 

I really try to eat glutten free as much as possible and I actually love the Glutino Brand English Muffins better than a regualr english muffin- they are so so buttery! I get them in the frozen section at Walmart.

If you don’t eat glutten free, I would suggest a sourdough english muffin.

Cooking the english muffins

 

I cooked mine in the air fryer because my air fryer is big enough, but you can also cook them in the oven.

Open them up and lay them flat on a pan, toast for about 3-4 minutes in the oven at 425° (after the meatloaf is done) or in the air fryer (I used the toast setting at a 4). Take them out and add the apple slices to one side and top the apples with cheese. Place them back into the oven/air fryer  for another 3-4 minutes or until the cheese is melted.

The easiest way to cook eggs for breakfast sandwiches is in these silicone trays!

 

There are a few ways you can cook eggs- obviously you can fry them or scramble them, but for meal prep sandwiches, I love using these egg trays  because they are the perfect size and make for an eay prep + clean up!

If using an 8×8 baking tray-

  • line it with parchment papper
  • scramble the eggs first and then add to the pan
  • season with salt + pepper and then bake

Tips for this Meal Prep

I prepared this meal with the Sriracha BBQ Turkey Meatloaves! I was able to make both of these meals in less than an hour, here’s how I did it-

  • I started by shredding the zucchini and making the meatloaf mixture
  • I placed the meatloaf into the oven and cracked the eggs into the tray. I placed the eggs into the oven underneath the meatloaf. It’s ok to cook these at the same time at cuch a high temperature because the eggs will not cook as fast at the bottom, just keep an eye on them!
  • while the eggs and meatloaf were cooking I cooked the cauliflower and green beans.
  • about the time i was done mashing the caulflower, the meatloaf was ready. I let that cool down while I toasted the english muffins + apples.
  • I put the meatloaf away while the sandwiches cooled down.
  • I started the clean up and then put away the sandwiches

Equipment

  • jumbo silicone muffin pan or use an 8x8 baking pan lined with parchment paper

Ingredients
  

  • 8 eggs
  • salt and pepper to taste
  • 4 slices of provolone cheese
  • 4 slices of ham
  • 1 apple sliced into extra thin slices
  • about ¼ tsp dried thyme
  • 4 english muffins of choice

Let's Make It
 

  • Add two eggs into each silicone muffin tray- scramble and season with salt and pepper.
    If using an 8x8 pan- line it with parchment paper and scramble the eggs in bowl before pouring into the pan.
  • Add the eggs into the oven under the meatloaf if cooking this meal with the Sriracha BBQ Turkey Meatloafs. If not cook these at 375° for about 15 minutes.
  • In the mean time slice the apples super thin and start toasting the english muffins.
  • To toast the muffins- open them up and lay them flat on a pan, toast for about 3-4 minutes in the oven at 425° (after the meatloaf is done) or in the air fryer. Take them out and add the apple slices to one side and top the apples with cheese. Place them back into the oven/air fryer for another 3-4 minutes or until the cheese is melted.
  • Once the eggs are done and cooled down add one to each sandwich.
  • Wrap sandwiches in parchment paper or plastic wrap and store in a bag or container in the fridge for up to 4 days.
  • To reheat- remove from plastic and microwave for 1:25.
