Ingredients:

  • chicken breast– cut into 1/2 inch cubes
  • olive oil
  • salt
  • pepper
  • garlic
  • your favorite noodles
  • spaghetti sauce
  • heavy cream– can sub for coconut cream, greek yogurt or cottage cheese
  • fresh basil
  • parmesan cheese

Spaghetti Glow Up- Creamy Chicken Pasta

Tired of eating basic spaghetti and still want a simple pasta meal to throw together in less than 30 minutes? Try this Creamy Chicken Pasta!

Ingredients
  

  • 3 large chicken breast cut into small chunks
  • 1 tbsp olive oil
  • salt + pepper to taste
  • 1 tbsp minced garlic
  • 5 oz dried pasta noodles fettuccine taste best, but use whatever you have/want. I like to use gluten free tagliatelle pasta from Trader Joe's!
  • 1/4 cup pasta water
  • 12 oz spaghetti sauce 1/2 the jar
  • 3/4 cup heavy cream or coconut cream
  • 1/4 cup parmesan cheese for topping
  • fresh chopped basil optional

Let's Make It
 

  • Cut the chicken into small 1/2 inch chunks.
  • Cook the chicken over medium high heat in a large skillet with 1 tbsp of olive oil.
  • Season with salt + pepper and continue cooking until the chicken reaches a temperature of 165℉ or is no longer pink in the middle.
  • In the meantime, boil the noodles.
  • Once the chicken is done, add the minced garlic to the pan and continue cooking for 1 minute.
  • Add 1/4 cup of pasta water to the chicken and use a spoon to scrape the bottom of the pan, getting all of the yummy burnt stuff at the bottom.
  • Add the spaghetti sauce + heavy cream and stir until combined.
  • Turn down the heat to low and add in the cooked noodles- toss everything together and cook on low for 5 minutes.
  • Serve with fresh parmesan and chopped basil on top! Enjoy!
