Pumpkin White Chocolate Energy Bites

I am seriously so excited for fall and all of the fun recipes that come with this season! I thought we would kick things off with these Pumpkin White Chocolate Energy Bites!

 

I love a good energy bite to help with those sugar cravings or to even eat after a workout with my protein shake, but most of them can be so caloric and that’s why I switch the creamy peanut butter for a peanut butter powder- this helps bring down the calories without taking away the yumminess!

Ingredients:

 

  • pumpkin puree- not pumpkin pie filling
  • PB Fit/Peanut Butter Powder
  • quick oats- they are just better for this recipe, but you can use regular oats. I always buy gluten free!
  • pumpkin pie spice
  • maple syrup 
  • chia seeds
  • flax meal 
  • Lilly’s White Chocolate Chips- these are low in sugar, but use whatever kind of chocolate you have on hand!
  • coconut oil

Let’s Make them!

 

These are so simple to make- you just need two medium size bowls and one small glass bowl to melt the chocolate!

  • I do reccomend mixing the wet and dry ingredients separately before folding them in together!
  • you can melt the chocolate to drizzle on top or even just add the chips into the mixture at the end
  • I like to store mine in the freezer so the last longer!

Pumpkin White Chocolate Energy Bites

Ingredients
  

  • 1/2 cup pumpkin puree not pie filling
  • 1/3 cup maple syrup or honey
  • 1 cup quick oats gluten free
  • 1/2 cup peanut butter powder/PB Fit
  • 2 tbsp of pumpkin spice
  • 1/4 cup flax meal ground flax seed
  • 2 tbsp chia seeds
  • *** adding in some pumpkin seeds would be really good too!
  • 1/2 cup Lilly's White Chocolate Chips
  • 1 tsp coconut oil

Let's Make It
 

  • In a large bowl mix together the pumpkin puree + maple syrup.
  • In another bowl mix together the oats, pb fit, pumpkin spice, chia seeds + flax meal.
  • Add the dry ingredients into the wet and fold until combined- roll into 1 1/2 inch balls (should get 16)
  • You can add in the chocolate chips at this point or you can melt them like I did to drizzle on top!
  • Add the chocolate chips into a metal bowl with 1 tsp coconut oil and melt in the microwave using 20 second intervals until melted- stirring in between each time.
  • Drizzle the melted chocolate over the energy bites and freeze for 30 minutes to harden the chocolate before adding into a bag/container to store in the freezer/fridge. I like to store mine in the freezer so they last longer!
