Teriyaki Chicken Bowls

Simple, yet so flavorful- slow roasted teriyaki chicken + brown rice, fresh veggies and pineapple

Chicken + rice with veggies is a classic. 

This chicken is seasoned so well, it comes out super juicy and takes such a simple dish and turns it into a flavorful lunch that is perfect for meal prep.

Ingredients:

 

  • chicken thighs– boneless/ skinless or subsitute for chicken breast
  • coconut aminos or soy sauce
  • honey
  • sesame oil
  • crunchy chili oil– I get it at trader joe’s, but the grocery store sells it next to the seasonings/spices or in the asain food section
  • minced garlic
  • mixed veggies– i did broccoli, snap peas + shredded carrots
  • pineapple– I used Golden Farms canned pineapple because it taste so fresh, but you can use whatever you want- fresh, frozen or cannned
  • brown rice– I buy frozen to save time

The Prep:

 

I use my instant pot to cook the chicken because it’s fast + easy. I like to start the chicken about an hour before I want to do the meal prep, so that it has time to cook. You can also use a crockpot.

 

  • To make the chicken, add all of the ingredients for the chicken into the instant pot or crockpot.

    crockpot- high for 4 hours

    instant pot- 25 minutes

    ***I like to do this in advance. It takes like 5 minutes to prep.

  • Cook the veggies over medium high heat- adding in ½ tbsp of olive oil. Cook for 2-4 minutes before adding in ¼ cup of water and placing the lid on the pan to get an even cook on the veggies.
  • Once the chicken is done, shred it and add in ½ cup of the juice from the chicken.
  • In each bowl add:

    – ½ cup cooked brown rice

    – 4-6 oz of chicken

    – 1½ cups of veggies

    – ¼ cup pineapple

    ** I like to top mine with Kinders teriyaki sauce

  • Store in the refrigerator for up to 4 days.

Tips for this Meal Prep:

I prepared this meal with the Sweet Potato Power Bowls. This meal prep was super fast and I was able to knock it out in about 45 minutes. 

Here is how I did it-

  • ABout 45 minutes before I was ready to start my meal prep, I went ahead and added the chicken into the instant pot and placed that on.
  • When the chicken was done, I went ahead and started chopping the poatoes and bell peppers
  • after I popped the potatoes into the  oven, I started to boil the eggs, cook the rice and the veggies in a pan on the stove. This does require some multitasking, but it’s all easy stuff.
  • Once the poatoes were done, i peeled the eggs
  • I assembled the teriyaki chicken first and let that cool down while, i made the sweet potato bowls
  • I let both of those meals cool down completely while I cleaned up.
  • Once everything was cooled down, I popped it into the fridge.

Ingredients
  

For the chicken:

  • lbs bonelss/ skinless chicken thighs or chicken breast
  • ¼ cup coconut aminos
  • cup sesame oil
  • ¼ tsp salt
  • 1 tbsp garlic
  • 1 tbsp crunchy chili oil
  • 1 tbsp honey

For the Bowls:

  • 12 oz fresh broccoli
  • cups snap peas
  • ½ cup shredded carrots
  • 2 cups cooked brown rice
  • 7 oz pineapple or 1 cup

Let's Make It
 

  • To make the chicken, add all of the ingredients for the chicken into the instant pot or crockpot.
