This High Protein Bean Dip is my healthier take on one of my favorite snacks!

This bean dip is loaded with flavor, so simple, yet it’s loaded with protein from the beans and cottage cheese! Use bell peppers for the “chips” and you have a well balanced snack!

The Deets:

This bean dip is so simple to make- you just layer the ingredients one by one!

  • heaping 1/4 cup of refried beans (try to do vegetarian)
  • 1-2 tbsp of salsa
  • 1/2 of a smashed avocado
  • Lime juice + salt
  • Heaping 1/4 cup of low fat cottage cheese
  • 1/2 tsp taco seasoning @sietefoods is my fave!
  • Pico de gallo or your favorite chunky salsa
  • Bell peppers

Important Steps:

  • you will want to mix the beans with a little bit of your favortie salsa. This makes the beans a little creamier and not as thick, plus, it adds more flavor to this!
  • layering the avocado after the beans is super important, this helps the avocado from turning brown.
  • you will also want to make sure you mix the taco seasoning with the cottage cheese to give it some flavor.
I love using these little glass cups for these snacks- the are the perfect size, but also so functional because they can also go in the oven! I’ve linked them below!

Ingredients
  

  • 1 can of vegan refried beans 1/4 cup per serving
  • 5-10 tbsp of your favorite salsa 1-2 per serving
  • 2 avocados smashed
  • 1 tbsp lime juice
  • 1/4 tsp salt
  • 2 1/2 tsp taco seasoning (i love Siete Foods because it's "clean") 1/2 tsp per serving
  • 1 1/4 cup Pico De Gallo or salsa of choice

Let's Make It
 

  • mix the beans with 1-2 tbsp of salsa, layer at the bottom
  • Add lime juice and salt to the avocado, layer over the beans
  • Add taco seasoning to cottage cheese, layer over the avocado (this will stop the avocado from turning brown)
  • Add fresh pico de gallo or salsa on top
  • swap of those chips for bell peppers and enjoy!
