If there is one thing I’ve learned during back-to-school season, it’s that having snacks prepped and ready to grab makes everything easier. Between packing lunches, getting everyone out the door, practices, homework, and all the other craziness that comes with the school year, I love having a few homemade options ready in the fridge or freezer. These Soft-Baked Monster Granola Bars are part of my back-to-school prep series, and they might be one of my kids’ favorite snacks yet.
There is just something so nostalgic about a chewy granola bar loaded with peanut butter, chocolate chips, and colorful M&M’s. They remind me of the snacks we grew up eating, but these are homemade with simple ingredients and are so easy to prep ahead.
And, of course, anything with M&M’s immediately feels like a treat to the kids—which means these are a VERY easy sell around here.
They’re soft and chewy but still sturdy enough to cut into bars, wrap individually, and toss into backpacks for school. Make a batch on Sunday, and you have an easy grab-and-go snack ready for the week.

I wanted these to feel more like a soft-baked granola bar than a crunchy granola bar or protein bite. They’re thick, chewy, peanut buttery, and have just enough sweetness from the honey, chocolate chips, and M&M’s.

A Back-to-School Snack Kids Actually Get Excited About
This is exactly the kind of recipe I love making for my back-to-school prep series because it checks both boxes: it makes my life easier, and my kids are actually excited to see it in their backpacks.
I’ll make a batch, let them chill, slice them into bars, and then wrap or portion them so they’re ready to grab.
They’re great for tossing into backpacks on the way out the door, adding to a lunchbox, or having ready when everyone gets home starving after school.
And because they freeze so well, you can make a double batch and save half for later. Future you will be VERY happy you did.
Why I Use Two Types of Oats
You’ll notice that this recipe uses both old-fashioned oats and quick oats.
The old-fashioned oats give the bars that classic hearty granola bar texture, while the quick oats help everything bind together. Using a combination of the two gives you a bar that feels substantial but doesn’t immediately crumble apart when your kids pull it out of their backpack.
I also add a little oat flour, which helps hold everything together even more. You can buy oat flour or simply blend some oats in a blender until they have a fine, flour-like consistency.
Optional Add-Ins
One of the nice things about homemade granola bars is that you can easily adjust them based on what you have in the pantry.
I love adding ground flaxseed for a little extra fiber and hemp hearts for an easy protein boost. Both blend right into the bars without changing the flavor much.
You could also swap the mini M&M’s for another candy-coated chocolate, use different chocolate chips, or add a sprinkle of extra M&M’s on top before baking to make them extra cute.
For a protein boost, you can also add unflavored collagen peptides. If adding collagen makes the mixture feel too dry, add another spoonful of peanut butter or a small drizzle of honey until the mixture is thick but easy to press into the pan.
How to Store Homemade Granola Bars
Once the bars are completely cooled and sliced, store them in an airtight container in the refrigerator for up to one week.
For school snacks, I like to individually wrap or portion the bars so they’re ready to grab in the morning.
You can also freeze these for up to three months. Place parchment paper between the layers or wrap the bars individually before placing them in a freezer-safe container or bag.
Pull one out the night before and let it thaw in the refrigerator, and it’ll be ready to toss into a backpack the next morning.
One note for school: because these contain peanut butter, make sure your child’s school or classroom allows peanut products. If needed, you can test the recipe with a school-approved nut- or seed-butter alternative.

The Secret to Soft-Baked Granola Bars
The biggest thing with this recipe is not overbaking them.
If you want that soft, chewy texture, pull the bars from the oven when the edges are lightly golden and the center is just set. They may look slightly underdone in the middle, but they’ll continue to set as they cool.
Once they are completely cooled, I like to put the entire pan into the refrigerator for at least an hour before slicing.
This makes SUCH a difference.
The bars firm up enough to slice cleanly without losing that soft, chewy texture once you bite into them.

Soft-Baked Monster Granola Bars
Ingredients
- 2 cups old-fashioned oats
- 1 cup quick oats
- ½ cup oat flour
- ½ cup natural peanut butter
- ⅓ cup honey
- ¼ cup butter melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 1 teaspoon baking powder
- ½ cup mini chocolate chips
- ⅓ cup mini M&M’s
- ¼ cup ground flaxseed optional
- 2-3 tablespoons hemp hearts optional
Let's Make It
- Preheat the oven to 350°F. Line an 8x8-inch baking pan with parchment paper, leaving a little overhang on the sides for easy removal.
- In a large mixing bowl, whisk together the peanut butter, honey, melted butter, eggs, and vanilla until smooth and well combined.
- Add the old-fashioned oats, quick oats, oat flour, cinnamon, salt, baking powder, flaxseed, and hemp hearts. Stir until everything is evenly combined.
- Fold in the mini chocolate chips and mini M&M’s.
- Transfer the mixture to the prepared baking pan. Press the mixture down very firmly and evenly into the pan. This helps the finished bars hold together.
- If desired, press a few additional mini M&M’s and chocolate chips into the top.
- Bake for 18–22 minutes, or until the edges are lightly golden and the center is just set. Do not overbake if you want the bars to stay soft and chewy.
- Allow the bars to cool completely in the pan.
- Once cooled, refrigerate for at least 1 hour before lifting the bars from the pan and slicing into 12 bars.
Notes
- For the best soft-baked texture, slightly underbake rather than overbake. The bars will continue to set as they cool.
- Chilling before slicing is important! It helps the bars firm up and gives you much cleaner cuts.
- Store the bars in an airtight container in the refrigerator for up to 1 week.
- To freeze, wrap individually or separate the bars with parchment paper and freeze in an airtight container for up to 3 months. Thaw overnight in the refrigerator before packing.
- For an optional protein boost, add unflavored collagen peptides. If the mixture becomes too dry, add a little additional peanut butter or honey.
- If packing these for school, check your school’s nut policy before sending peanut-containing snacks.

You can use any two of the meals in this series to get your meal prep done in just about and hour, give or take!
