Back-to-school season always gets me into full prep mode. I know firsthand how chaotic school mornings can be, and having breakfast already made takes so much stress out of the morning rush.
One thing I always try to prioritize is giving my kids a breakfast that’s packed with protein. I notice such a difference when they start their day with something filling instead of grabbing something sugary on the way out the door. A higher-protein breakfast helps keep them full longer, gives them steady energy through the morning, and helps them stay focused during school.
These mini breakfast sandwiches have quickly become one of my favorite freezer breakfasts. They’re made with higher-protein everything bagels, fluffy baked eggs mixed with cottage cheese, crispy bacon, cheddar cheese, and everything bagel seasoning for tons of flavor. The eggs bake all at once in the oven, making this recipe incredibly simple, and the sandwiches freeze beautifully.
I wrap each one individually in parchment paper bags before storing them in the freezer. That way, on busy mornings all I have to do is pull one out, warm it up, and breakfast is ready in just a couple of minutes.

Reheating Instructions

Let's Make It
- Preheat oven to 350°F.
- Line a 9x13 baking dish with parchment paper and spray lightly.
- Whisk together eggs, cottage cheese, and everything bagel seasoning.
- Pour into the prepared pan.
- Sprinkle evenly with cheddar cheese and chopped bacon.
- Bake for 22–28 minutes until fully set.
- Cool for 10 minutes.
- Cut egg rounds using a biscuit cutter.
- Toast bagels.
- Assemble sandwiches with an egg round and slice of cheddar cheese.
- Cool completely.
- Wrap individually and freeze.
