This cheeseburger roll up recipe has quickly become one of my favorite additions to our Back-to-School Fridge Prep Series because I can make a big batch at once, keep them in the refrigerator for several days, and lunch is basically done. On busy school mornings, I simply grab one, pack it with a container of burger sauce for dipping, and add fruit, veggies, or chips on the side.
One of my biggest goals during the school year is making lunch feel exciting without spending extra time every morning. My kids think they’re getting something fun, and I know they’re getting a homemade lunch with plenty of protein that will actually keep them full.
The caramelized onions really take these over the top. They add just enough sweetness to taste like a cheeseburger fresh off the grill, while the cheddar cheese melts into the seasoned beef for the perfect bite.

Cheeseburger Roll Ups for Easy Back-to-School Lunches
Ingredients
- 1 lb lean ground beef
- 1 tsp onion powder
- 1 tsp kosher salt
- ½ tsp pepper
- 1 tbsp yellow mustard
- 1 tbsp Worcestershire sauce optional
- 1 tbsp butter
- 1 large yellow onion thinly sliced
- 2 cups shredded cheddar cheese
- 8 fajita-size flour tortillas
- Cooking spray or melted butter
Serve with:
- Burger sauce
Let's Make It
- Cook the Onions: Heat butter in a large skillet over medium heat.
- Add the sliced onions and cook for 12–15 minutes, stirring every few minutes, until they’re soft, golden brown, and caramelized.
- Remove from the skillet and set aside.
- Cook the Beef: In the same skillet, cook the ground beef until browned.
- Drain any excess grease.
- Stir in the onion powder, salt, pepper, yellow mustard, and Worcestershire sauce. Cook for another minute.
Assemble
- Lay out the tortillas.
- Divide the beef evenly between each tortilla.
- Top with shredded cheddar cheese.
- Add a layer of caramelized onions.
- Roll tightly like a taquito.
Bake
- Preheat oven to 425°F.
- Place roll ups seam-side down on a parchment-lined baking sheet.
- Lightly spray with cooking spray or brush with melted butter.
- Bake for 12–15 minutes, flipping halfway through, until golden brown and crispy.
- Serve warm with burger sauce for dipping.
