Peaches are at there best right now at the end of summer! This recipe is such and easy weeknight dinner with so much flavor, you will love this!
Ingredients:
chicken thighs
Mrs. Dash southwest chipotle seasoning: this is just what I like to use, but you can season it with just salt, pepper, garlic, paprika and parsley or any other seasoning you love!

Sheet Pan Meals
Sheet pan meals are my favorite for those busy nights! I use an extra large sheet pan for this recipe to help with overcrowding of the pan.
I would suggest using some parchment paper to cover the bottom of the pan for this recipe to help with clean up!
30 minute busy mom dinner series
I started this series thinking it would be a few quick and easy options for busy weeknights, but I really don’t see this series ever ending or at least anytime soon!
Obviously you don’t have to be a mom to make these meals and enjoy them, but I did set out with a purpose and that was to help moms feel a little less stressed in the kitchen when it came to putting easy + healthy meals on the table for their family!

Peach + Pepper Chicken
Tender roasted chicken thighs with fresh peaches and a little kick with the jalapenos- served with rice and veggies.

Ingredients
- 2.5-3.5 lbs chicken thighs boneless/skinless
- 3 tbsp Mrs. Dash southwest chipotle seasoning
- salt to taste
- 2 tbsp olive oil
- 4 fresh peaches sliced
- 1 jalapeno sliced
- 1/2 cup bbq sauce
Let's Make It
- Preheat the oven to 425℉
- On a large baking sheet, lay the chicken thighs out flat, season both sides with the southwest chipotle seasoning + salt. Drizzle with olive oil and place in the oven for 12 minutes.
- In the meantime slice the peaches and jalapeno.
- After 12 minutes, add the peaches + jalapenos to the sheet pan and drizzle everything with bbq sauce.
- Place the chicken back into the oven for another 15 minutes or so or until the chicken reaches a temp pf 165℉. You can turn on the broil function for the last 5 minutes to crisp everything up if desired.
- Serve with rice and roasted veggies and enjoy!
