On a large baking sheet, lay the chicken thighs out flat, season both sides with the southwest chipotle seasoning + salt. Drizzle with olive oil and place in the oven for 12 minutes.
In the meantime slice the peaches and jalapeno.
After 12 minutes, add the peaches + jalapenos to the sheet pan and drizzle everything with bbq sauce.
Place the chicken back into the oven for another 15 minutes or so or until the chicken reaches a temp pf 165℉. You can turn on the broil function for the last 5 minutes to crisp everything up if desired.
Serve with rice and roasted veggies and enjoy!
