  • 4 oven safe glass meal prep containers or an 8x8 pan

Ingredients
  

  • 1/2 lb all-natural breakfast sausage
  • 6 slices of bacon, cooked and crumbled
  • 1 cup chopped green onions
  • 1/2 cup shredded cheddar cheese
  • 24 tater tots ***add more if you want, adjust the macros!
  • 10 large eggs
  • 1 cup low fat cottage cheese
  • Non-stick cooking spray

Let's Make It
 

  • 1. Preheat the Oven:
    • Set your oven to 400°F (200°C).
  • 2. Cook the Meats:
    • In a skillet over medium heat, brown the breakfast sausage until fully cooked. Drain any excess fat.
    • Ensure the bacon is cooked to your desired crispness and crumbled into pieces.
  • 3. Prepare the Egg Mixture:
    • In a large bowl, whisk together the eggs and cottage cheese until well combined. Season with salt and pepper to taste.
  • 4. Assemble the Bakes:
    • Lightly spray four individual meal prep containers or ramekins with non-stick cooking spray.
    • Evenly distribute the cooked sausage, crumbled bacon, chopped green onions, and shredded cheddar cheese among the containers.
    • Place 6 tater tots into each container.
