Homemade Cereal Bars

These bars make for the perfect on the go breakfast or snack and are so easy to make that you will never buy store bought again!

 

You can customize these bars to any flavor you want! Today I am sharing a chocolate peanut butter recipe, but I really think a strawberry version would be so so good using freeze dried strawberries and white chocolate….stay tuned because I definitely will be making those! 

 

Ingredients:

 

  • cereal: I love using a clean cereal like Three Wishes for these bars because it has tons of protein in it, plus it is sweetened with monk fruit instead of refined sugars! You can pick it up at your local Target or Sprouts!
  • peanut butter: or any nut butter of choice! If making the strawberry version or one with sprinkles, I would  probably use cashew butter.
  • protein powder: I use Truvani

Lets make them!

 

It really doesn’t get much easier than mixing all of the ingredients together in a bowl, spread into a pan and top with melted chocolate- literally that is all you have to do!

 

I highly suggest making a double batch because if your kids are like mine, they will be gone so fast!

 

I like to leave these in the freezer and pop them out as we eat them, they do tend to fall apart just a little and keeping them in the freezer helps them stay together. They do not turn hard and defrost in seconds!

Cereal Bars

These kid friendly high protein cereal bars are great for busy mornings on the go!

Equipment

  • 8x8 pan
  • parchment paper

Ingredients
  

  • 3 cups cereal I like using Three Wishes Honey cereal for this recipe to keep it gluten free and high in protein.
  • 2/3 cup peanut butter slightly melted (20-30 seconds in the microwave)
  • 1/3 cup honey
  • 1/4 tsp salt
  • 3 tbsp protein powder I use chocolate
  • 1/2 cup chocolate chips for melting on top

Let's Make It
 

  • After slightly melting the peanut butter, add all of the ingredients into a bowl- stir to mix until everything is combined.
  • Add a piece of parchment paper to the bottom of an 8x8 or 9x9 inch baking pan and then pour the mixture into the pan. Use another piece of parchment paper to smash the mixture into the pan until the the mixture is flat on the top and pushed to the edges for square bars once cut.
  • Drizzle with melted chocolate if desired.
  • Freeze for 45 minutes before cutting into 10 bars.
  • Store in container in the freezer and pull them out when ready to eat,
