High Protein Smoothie Bowl

This Smoothie Bowl is loaded with strawberry whipped cottage cheese, fresh strawberries, chia seeds + granola!

I’ve never really been a yogurt fan so I am really loving whipped cottage cheese right now! It is the same consistency of yogurt, still high in protein, but it’s more of a lighter, creamier flavor- not sour like greek yogurt!

Ingredients:

 

  • cottage cheese- low fat
  • fresh strawberries
  • honey 
  • vanilla extract
  • chia seeds
  • granola– I’m using a gluten free one from trader joe’s, but you also want to find something low sugar!

The Prep:

 

You do need a food processor to whip the cottage cheese. I have never tried using a blender, but you can give it a try, you might just need to add a little more liquid.

  • In a food processor whip up the cottage cheese with 1½ cups of strawberries, 1 tbsp honey + 1 tsp vanilla extract. Blend for about 2-3 minutes or until the mixture is smooth and creamy. It will have a yogurt like consistency.
  • Divide the cottage cheese mixture into 5 bowls/containers, top with strawberries, chia seeds + granola
  • Store in the fridge for up to 6 days!

 

Tips for this Meal Prep

We are going completely meatless this week with Peach + Arugula Salad made with Banza Rice +  and Strawberry Smoothie Bowls. I was able to prep both of these meals in less than 45 minutes!

Here is how i did it- step by step!

  • boil the Banza Rice for 5 minutes
  • while the rice is cooking slice the strawberries and peaches.
  • drain the rice and rinse with cold water
  • toss together the ingredients for the salad and add that to the containers with the arugula. 
  • after the salad is put away- blend up the cottage cheese with the strawberries.
  • Add the whipped cottage cheese to the bowls, top with strawberries, chia + granola
  • after everything is put in the fridge, you can clean all of this up in less than 10 minutes!

So easy!
