Gluten Free Strawberry White Chocolate Blondies

A chewy, decadent batter with juicy strawberries and white chocolate chips baked to perfection- these are the perfect gluten free summer treat!

I love a good blondie because it reminds me so much of a big cookie, the texture is almost the same the flavor is almost the same and they are so much easier to make! After going gluten free a few years ago I tried some of my favorite recipes using a 1:1 gluten free flour and I have found it to be so easy to work with. The texture is usually the same and most of time you can’t even tell it’s gluten free. If you have not tried my brownie recipe from my cookbook, you definitely need to!

 

As I was looking through my fridge the other day I noticed my strawberries needed to be used, so I thought I would add them to my blondie recipe! To no surprise, they were amazing! The strawberry pairs so well with the white chocolate and helps keep these blondies ooey gooey!

Ingredients:

 

  • 1:1 gluten free flour- this means you can substitute it to any recipe that calls for all purpose flour using a 1 cup to 1 cup ratio (so the same amount)

  • baking powder

  • salt

  • coconut oil

  • coconut sugar- I have not made this with honey, but I think if could use 3/4 cup of honey in replacement of the coconut sugar and it would taste fine

  • eggs

  • vanilla extract

  • white chocolate chips

  • chopped strawberries

What size pan do I use?

 

I use an 8×8 brownie pan for this recipe lined with parchment paper.

The smaller baking pan will give you a thicker blondie and using the parchment paper makes for easy clean up and keeps it from not sticking. Wait for the blondies to completely cool before transporting out of the pan.

 

If you double the batch, use a 9×13 baking pan.

Gluten Free White Chocolate Strawberry Blondies

Ingredients
  

  • 1 1/2 cup gluten free 1:1 flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup coconut oil
  • 3 eggs
  • 1 1/4 cup coconut sugar
  • 2 tsp vanilla extract
  • 1 cup white chocolate chips
  • 1 1/2 cups chopped fresh strawberries

Let's Make It
 

  • Preheat the oven to 350℉
  • In a bowl mix together the flour, salt and baking soda.
  • In another bowl mixt together the eggs, vanilla and coconut sugar. (this will get very thick
  • Add the flour mixture to the wet ingredients, using a spoon, stir the mixture until everything is combined. The batter will be VERY thick,m just trust the process!
  • Fold in the chocolate chips + chopped strawberries.
  • Line and 8x8 baking dish with parchment paper and pour the batter into the dish. Use a spoon to spread the mixture evenly into the pan.
  • Bake for 30-40 minutes. Use a toothpick to see if the blondies are done, they will be done when the toothpick comes out clean.
  • Once cool, remove from the baking dish and cut into 12 squares.
  • Store in the refrigerator for up to 5 days!
