Chipotle Chicken Sandwiches + Fresh Peaches

Tender and juicy grilled chicken with fresh peaches, bacon, arugula, chipotle aioli on crispy grilled Schar Ciabatta bread.

With back to school starting last week things are definitely feeling so much busier! I love doing a sandwich night once a week to make things easy! 

 

This easy grilled chicken sandwich comes together in just 30 minutes and I even keep this one gluten-free using Schar’s ciabatta bread

 

Ingredients:

  • chicken breast: cut in half down the middle to make thinner breast
  • paprika
  • salt
  • garlic powder
  •  pepper
  • provolone cheese
  • bacon
  • arugula
  • peaches 
  • chipotle aioli
  • butter

The key to a great sandwich

 

for this recipe you want to make sure you slice the chicken really thin before adding it to the sandwich! I also like to let it sit for just a few minutes after cooking so the chicken stays juicy!

 

Layer both sides of the bread with the homemade chipotle aioli. If you do not care for spicy sauces, you could do a basil pesto with this or even a BBQ sauce, which is what my husband prefers! 

 

Slice the peaches super thin! I do leave the skin on because I don’t mind the texture, but if it bothers you, just cut it off. You could sub for sliced apples as well!

 

I am using Schar’s gluten-free ciabatta rolls for this! The have the best texture and flavor! I like to butter them up and toast up in a hot skillet until the turn a golden brown color.

30 minute busy mom dinner series

I started this series thinking it would be a few quick and easy options for busy weeknights, but I really don’t see this series ever ending or at least anytime soon! 

 

obviously you don’t have to be a mom to make these meals and enjoy them, but I did set out with a purpose and that was to help moms feel a little less stressed in the kitchen when it came to putting easy + healthy meals on the table for their family!

Ingredients
  

  • 2 large chicken breast cut in half to make 2 thinner breast
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 5 slices provolone cheese
  • 5 pieces of cooked bacon
  • 2 cups fresh arugula
  • 2 peaches thinly sliced
  • 5 ciabatta rolls I love the Schar brand for a gluten free option
  • softened butter to butter the bread

Chipotle Aioli

  • 1/2 cup mayo
  • 1 tbsp chopped chipotle peppers
  • 1 tsp dijon mustard
  • 1 tbsp honey
  • 1/8 tsp garlic powder

Let's Make It
 

  • After slicing the chicken breast breast in half, season with the seasoning and add to a skillet over medium high heat with 1 tbsp of olive oil. Cook for 4-5 minutes per side until the chicken reaches an internal temperature of 165℉.
  • In the meantime toast the buttered buns in a skillet until golden brown.
  • Make the chipotle aioli by combining all of the ingredients in a small bowl until the aioli is smooth + creamy.
  • After the chicken is done, let it rest for just a few minutes and then slice into strips.
  • Layer the the sandwich with aioli on both sides, the sliced chicken, cheese, bacon, arugula and fresh peaches.
  • Serve with a side of fries and enjoy!
