You know those meals where you make it once… and immediately know it’s going into your permanent rotation?
This is one of those.
I threw this together for meal prep using what I already had in the fridge — my oven-baked chicken, some potatoes that needed to be used, and a craving for something creamy, cheesy, and comforting… but still macro-friendly.

Why This Works So Well for Meal Prep
Some meals are great fresh… and awful reheated.
This is NOT one of those meals.
The potatoes stay tender, the chicken stays juicy thanks to the ranch, and the cheese just gets better as it sits.
This is why it works:
The ranch is slightly watery so it soaks into everything while baking
The potatoes are diced super small so they cook evenly
Baking it covered first traps steam and keeps everything soft
Bacon goes on at the end so it stays crispy
It’s cozy, creamy, filling, and still fits into a high-protein lifestyle.

What You Need to Make It
This recipe is super flexible, but here’s the base:
Potatoes: Dice them tiny so they cook fast
Onion: Adds flavor to every bite
Oven-baked chicken: Any cooked chicken works
Greek yogurt ranch: The star
Cheese: Cheddar, Colby Jack, mozzarella — whatever you love
Bacon: Because… bacon
Green onions: Fresh and bright on top

Air fryer chicken
Leftover chicken
How to Layer It
This is how I build it in each glass container:
Potatoes + onions
Chicken
Ranch poured over
Cheese on top
Bake covered, then finish with bacon and green onions.
That layering matters — it lets the potatoes steam in the ranch and chicken juices so they get super tender.
Serving Ideas
Even though I made this for meal prep, you can serve it a bunch of ways:
Straight from the container

In a tortilla as a wrap
With a side of fruit for kids
My kids love this one because:

Tips for this Meal Prep
This is one of my favorite meals to prep because it holds up so well.
Store in glass containers for best reheating
Let cool before sealing lids
Keep in fridge up to 4 days
Reheat 1–2 minutes in microwave, stirring halfway
If you like crispy tops:
Pop it in the air fryer for 5 minutes
Or broil for 2–3 minutes after reheating

Chicken Bacon Ranch Bake
Ingredients
- 1 ½ lbs potatoes diced very small
- 1 small onion finely chopped
- 20 oz cooked chicken- chopped (about 5 oz per serving) see my oven baked chicken below
- 1 cup shredded cheese cheddar, Colby Jack, or mozzarella
- 6 slices bacon cooked and crumbled
- Green onions for topping
High-Protein Ranch:
- 1 ½ cups plain Greek yogurt (Ranch should be pourable and slightly watery)
- 1 packet or 2 Tbsp ranch seasoning
- ¼ –½ cup milk to thin
- 1 –2 Tbsp pickle juice
- ½ tsp onion powder
- Salt & pepper to taste
Let's Make It
- Preheat oven to 400°F ande spray glass containers with olive oil.
- Dice potatoes very small so they cook quickly. Add to a bowl with onions and a little salt and pepper.
- Divide potatoes and onions evenly between 4 glass meal prep containers.
- Add 5 oz chopped chicken to each container.
- Whisk together ranch ingredients until pourable.
- Pour ranch evenly over each container.
- Top with cheese.
- Cover loosely with foil and bake 35–40 minutes, until potatoes are tender.
- Remove foil, add bacon, and bake 5 more minutes.
- Finish with green onions.
