Bang Bang Chicken + Rice Bowls
Ingredients
- 3 chicken breast cut into 1 inch chunks
- 2 zucchini chopped
- 1 red bell pepper chopped
- 1 tbsp paprika
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tsp salt
- 3/4 cup avocado oil mayonnaise
- 1/3 cup thai sweet chili sauce
- 1 tbsp sriracha
- 1 tsbp honey
- 2 1/2 cups white rice cooked
- diced green onions for topping
Let's Make It
- Preheat the air fryer or oven to 425℉.
- Dice the chicken and season with paprika, onion, garlic + salt.
- Layer the chicken, zucchini + bell peppers on an air fryer pan/basket or a large sheet pan for the oven.
- In a bowl mix together the mayo, thai sweet chili sauce, sriracha + honey.
- Pour half of the sauce over the chicken + veggies- toss to evenly coat everything with the sauce.
- Roast in the air fryer for 15-20 minutes depending on the air fryer or until the chicken reaches an internal temperature of 165℉.
- In the meantime, cook the rice and chop the green onions.
- Serve over white rice + green onions!
