A Busy Mom Dinner that needs to make it into your weekly rotation!

 

As a busy mom, finding delicious and healthy recipes that can be whipped up in less than 30 minutes is like discovering gold at the end of a rainbow. Enter the Air Fryer Bang Bowls – simple dinner that packs flavor + nutrition in one vibrant dish

 

Ingredients:

 

  • chicken breast
  • paprika
  • onion powder
  • garlic powder 
  • salt
  • mayo– I like to use avocado oil mayo
  • thai sweet chili oil– found in the asian section
  • sriracha
  • honey
  • zucchini 
  • red bell pepper
  • rice 
  • green onions

Cooking Tips:

 

– Don’t overcrowd the Air Fryer basket. Ensure there is enough space between the chicken and vegetables to allow for even cooking and crisping.

– Consider adding a squeeze of lime juice or a sprinkle of cilantro for an extra burst of freshness and flavor.

– Feel free to customize the recipe based on your family’s preferences. You can adjust the spice level by adding more or less sriracha, or swap out vegetables based on what’s in season or what you have on hand.

Healthy Swaps:

 

This meal is slightly over 600 calories and that includes all of the sauce + 1/2 cup of cooked rice. 

 

  • Swap out the rice for cauliflower rice to save on calories + carbs.
  • Cut back on the sauce- this recipe makes a lot of sauce! Use less to save on calories + fat from the mayo. You can even use a light mayo instead of avocado oil mayo!

Bang Bang Chicken + Rice Bowls

Ingredients
  

  • 3 chicken breast cut into 1 inch chunks
  • 2 zucchini chopped
  • 1 red bell pepper chopped
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 3/4 cup avocado oil mayonnaise
  • 1/3 cup thai sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsbp honey
  • 2 1/2 cups white rice cooked
  • diced green onions for topping

Let's Make It
 

  • Preheat the air fryer or oven to 425℉.
  • Dice the chicken and season with paprika, onion, garlic + salt.
  • Layer the chicken, zucchini + bell peppers on an air fryer pan/basket or a large sheet pan for the oven.
  • In a bowl mix together the mayo, thai sweet chili sauce, sriracha + honey.
  • Pour half of the sauce over the chicken + veggies- toss to evenly coat everything with the sauce.
  • Roast in the air fryer for 15-20 minutes depending on the air fryer or until the chicken reaches an internal temperature of 165℉.
  • In the meantime, cook the rice and chop the green onions.
  • Serve over white rice + green onions!
