- 1/2 lb ground turkey
- 3/4 cup chopped red onion
- 4 cup chopped kale
- 2 gala apples chopped with the skin on
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp minced garlic
Maple Mustard:
- 3 tbsp maple syrup
- 2 tbsp brown mustard

- Prepare and Roast the Sweet Potatoes:• Preheat the oven to 400°F (200°C).• Slice the sweet potatoes in half lengthwise and place them on a baking sheet, cut side up. Drizzle with olive oil, then sprinkle with salt and pepper.• Flip the sweet potatoes cut side down and roast for 30 minutes, or until fork-tender.
- Cook the Filling:• While the sweet potatoes are roasting, heat a large skillet over medium heat.• Remove the Italian sausage from its casing and add it to the skillet along with the ground turkey and chopped onion. Cook until the meat is browned and cooked through, breaking it up with a wooden spoon.• Add the chopped apples, kale, garlic, salt, and pepper. Cook for another 5-7 minutes, stirring occasionally, until the kale is wilted and the apples are slightly softened.
- Prepare the Maple Mustard:• In a small bowl, whisk together the maple syrup and brown mustard until smooth. Set aside.
- Assemble the Stuffed Sweet Potatoes:• Remove the sweet potatoes from the oven and let them cool slightly. Use a spoon to gently mash down the center of each sweet potato half, creating a space for the filling.• Generously stuff each sweet potato with the sausage, apple, and kale mixture.
