Everything + The Bagel Egg Salad
Egg salad loaded with everything but the bagel seasoning + bacon served over a crispy bagel

This will be one of the easiest Meal Preps you will ever do!
I love a good egg salad, but I’ve never really thought about making one for breakfast. So I’ve added in some everything but the bagel seasoning to pull in those breakfast flavors we all love and OMG it is sooooo good!
I was pressed for time this week and didn’t feel like peeling eggs for 30 minutes (because I really suck at doing that), so I cheated and bought some already made- there’s nothing wrong with that. Although, I do think it would have tasted a little better with fresh.
Ingredients:
- hard boiled eggs
- plain greek yogurt– less calories than mayo
- dijon mustard
- mayo
- red onion
- salt + pepper
- everything but the bagel seasoning
- bacon
- greens– I did a spinach + arugula blend
- your favorite bagel– I used the GF everything bagels from trader joe’s

My egg chopping hack:
I just add a cooling rack over a large bowl and then press the egg right into the rack. It cuts it into the perfect little pieces and takes just a few minutes- super easy!
I love this for a busy week because there is no cooking really- except for the eggs! If you are boiling your eggs this is how I do it-
- add the eggs into a small pot, fill with water and bring to a boil
- let the water boil for 2 minutes and then turn off the heat.
- set the timer for 10 minutes.
- after the 10 minutes- remove the eggs from the water and place into an ice bath (a bowl of water + ice).
- let the eggs sit for 5 minutes and the remove from the ice bath
Egg Salad Jars
I took my classic egg salad wrap recipe and turned it into easy salad jars for meal prep — and honestly, I might like this version even better. Instead of using mayo, I went with non-fat Greek yogurt for extra protein and that tangy flavor I love. I also layered in fresh greens to add crunch and color, and skipped the wrap altogether. To keep it satisfying, I served it with half a toasted English muffin on the side, which makes the perfect little combo for lunch. It’s creamy, high in protein, and one of those meal preps you actually look forward to eating all week.
Tips for this Meal Prep
I paired this meal prep with the Philly Cheesesteak Bowl. Both of these meals took me less than an hour to make. This is how I did it-
- If I would have boiled my own eggs, I would have done that first.
- While the eggs are cooking- chop the peppers, onions + mushrooms and make the rice
- Once the eggs are done, start browning the meat for the philly bowl, then the peppers
- put together the philly bowls while the eggs are still cooling down.
- Start cooking the bacon, peel the eggs and toast the bagels (you can do all of that at once)
- Mix together the egg salad ingredients
- put together the egg salad containers and start the clean up

Everything + The Bagel Egg Salad
Ingredients
- 7 eggs hard boiled
- 7 egg whites hard boiled
- ⅓ cup mayonnaise/light mayo or non-fat greek yogurt
- 1 tbsp dijon mustard
- ⅛ cup diced shallots
- salt + pepper to taste
- 1 tsp everything but the bagel seasoning + more for garnish
- 4 pieces of chopped bacon
- 5 higher protein wraps or wraps of choice I used the B Free wraps- Costco or walmart
Let's Make It
- Start by boiling your eggs. I like to add my eggs into a pot, bring to a boil, let boil for 1 minute and then turn off the heat. Set the timer for 10 minutes- drain the eggs and add into an ice bath (cold water+ ice).
- While the eggs are cooking- fry up the bacon
- Once the eggs have cooled down, peel them, chop them up (set my hack above) and add them into a bowl.
- When the eggs are compeletely cooled down- add the greek yogurt/mayo, dijon, everything but the bagel seasoning, salt + pepper. Fold the mixture until everything is well mixed.
- Divide the egg salad into each wrap.
- Top the egg salad with more everything but the bagel seasoning and the bacon.
- Store in the fridge for up to 4 days!
