Sweet Potato + Soyrizo Waffles with Sriracha Maple Syrup

As part of my Meal Prep in 1 Hour Series, these Sweet Potato + Soyrizo waffles are hands down one of my favortie breakfast! Not only are the great for meal prep, but they are also one that the whole family will love for sunday morning breakfast! 

Not a soyrizo fan? you can make these with your favorite ground breakfast sausage!

Meal Prep in 1 Hour

You can use any two of the meals in this series to get your meal prep done in just about and hour, give or take!

Having your breakfast and lunch ready for the week helps you stay on track with your nutriton, saves you time and money! I truly beleive that meal prep does not need to be over complicated, take too much time or be boring!

I always get asked- “do you ever get tired of eating the same thing all week?” and the answer is, no! Not when the food taste good! I give plenty of variety in these preps and keep it simple!

Ingredients:

I love these waffles so much- they are super easy and quick to make, are perfect for meal prep and taste great re-heated in the air fryer!

So, grab a cheese grater, a bowl, your waffle iron, roll up your sleeves and lets do it!

  • Shredded sweet potatoes: you will need one really large potato or two medium size potatoes. Once it’s cooked you will need 2 1/2 cups.
  • Eggs
  • Sharp cheddar or pepper jack cheese (I usually do cheddar)
  •  Soyrizo: removed from the casing. 
  • 1 cup of chopped spinach
  • green onions
  • salt
  • pepper
  • garlic powder 
  • maple syrup
  • sriracha 
  • cilantro 

The Prep:

  • Start by wrapping your (washed) sweet potatoes in plastic wrap. Pace them in the microwave and cook them for 5 minutes.
  • Let the potatoes cool, peel off the skin or leave it on, up to you and then shred with a cheese grater. You will need aproximately 2 1/2 cups. 
  • In a large bowl add the remaining ingredients and give it a good toss, using your hands to break up the soyrizo.
  • Pre-heat your waffle iron to a medium high setting. When your waffle iron is ready, spray the top and bottom with non-stick spray and place about 3/4 cup of the waffle mixture into the iron, using the bottom of the measuring cup (or spatula) to evenly distribute the mixture. Press the iron down and let each waffle cook for 3-5 minutes or until browned and easily able to be removed from iron.
  • Repeat until all of the mixture is gone, this recipe will make about 4-5 waffles and can easily be doubled to make more.
  • Assemble yur contianers with spinach on the bottom, one waffle and when i’m ready to eat these for breakfast, i always top the  waffles with a fried egg + Sriracha Maple Syrup!
  • Store in  in the refrigerator for up to 4 days.

Tips for this meal prep

I paired this prep with the Greek Chicken Power Bowl

You can prepare both of these meals in about an hour give or take if you can work efficiently! Here’s how i did it-

  • first thing first- get the chicken marinating and let that sit while you preheat the oven and make the waffle mixture.
  • When you have made the waffle mixture, pop the chicken in the oven and set the timer for 20 minutes.
  • Start your first waffle and put on some quinoa to cook while you chop the veggies for the power bowl and make the sriracha maple syrup.
  • Check the chicken at 20 minutes and pull that out when it reaches a temperature of 165.
  • Start assembling your quinoa bowls first with the quinoa on the bottom, let that cool down before you add in the veggies.
  • Chop the chicken while the qunioa is cooling down and then finish assembling the power bowls.
  • Once the waffles are cooled down assemble each container with spinach on the bottom and add in the waffles.
  • throw the lids on and start cleaning up!

Ingredients
  

  • 2 sweet potatoes you will need about 2 1/2 cups
  • 2 eggs

  • 5.5 oz soyrizo removed from casing

  • 2 green onions diced
  • dash salt to taste
  • dash pepper to taste
  • dash garlic powder to taste
  • chopped cilantro for garnish

For the Sriracha Maple Syrup

  • 2 tbsp sriracha
  • 3 tbsp maple syrup

Let's Make It
