BLT Breakfast Sandwiches

A breakfast staple- these BLT breakfast sandwiches are made simple by making sheet pan eggs, layered with bacon, greens, tomato + everything but the bagel seasoning!

I love having something simple on hand to eat on a busy morning. Whether you meal prep or not, these can be made in bulk and stored in the freezer for up to 30 days!

 

These breakfast sandwiches are something the whole family loves, so when I make them, I usually make a bunch to freeze for those busy mornings when my husband is in a rush to get to work or my teenager spent too long getting ready and forgot that she needed to eat before school. IYKYK

Ingredients:

 

I try to eat gluten free and I really love the english muffins from Glutino (found in the freezer section at Walmart). Just use whatever brand you like or give these gluten free ones a try!

  • eggs
  • cottage cheese– this helps keep the eggs fluffy and from drying out when reheated.
  • feta cheese or cheese of choice- you can skip the feta and do a slice of whatever cheese you want when you layer the sandwiches.
  • everything but the bagel seasoning
  • english muffins
  • mixed greens or spinach 
  • tomato

there are so many options to layer the sandwiches, make these your own with whatever combo of veggies and protein you want.

The Prep:

 

Making the eggs on a sheet pan keeps things simple. You can double or triple the batch of eggs to make as many sandwiches as you want.

  • Preheat the oven to 375°
  • In a bowl whisk together the eggs, seasoning, salt, cottage and feta cheese.
  • In an 8×8 baking dish either lined with parchment paper or sprayed with oil, add in the egg mixture. Bake in the oven on the middle rack for 20-25 minutes.
  • In the meantime, toast the english muffins and slice the tomatoes.
  • When the eggs are firm in the middle, take it out to cool down.
  • Cut the egg into 4×4 quares
  • Make each sandwich with with one 4×4 square of egg + one slice of bacon. Add in ½ cup of greens + tomato slices on the side.
  • To reheat these, take the muffin out of the container and wrap in a paper towel, cook in the microwave for about 1:15. Then add on the toppings.

If you are making these in bulk to freeze, wrap them in parchment paper + plastic wrap and then into a bag to place in  the freezer. To reheat the frozen, remove the plastic wrap and microwave on 1 min per side until warmed up through the middle.

 

Tips for this Meal Prep

I prepared this Meal Prep in 1 Hour with the Firecracker Turkey Meatbals. Here are a few things i did to get it done in just an hour!

  • Get the eggs into the oven and then cook the bacon, toast the english muffins  + make the rice noodles
  • when the bacon is done start making the meatball mixture and get those into the air fryer or the oven.
  • If you are using the oven and the eggs aren’t done yet, just put the meatballs into the oven on the top rack and then turn the oven up to 400 when the eggs are done. You can totally cook them both at the same time to save time!
  • While the meatballs are cooking, chop the cucumbers and peppers, add in the sauces to make this into a salad and set aside.
  • As the meatballs cool down, put away the blt breakfast sandwiches.
  • Last thing to do is add the meatballs into the contianers with the noodles + cucumber salad.

Ingredients
  

Egg Mixture:

  • 8 eggs
  • ¼ cup feta cheese
  • ½ cup cottage cheese
  • 1 ½ tbsp everything but the bagel seasoning
  • ½ tsp salt only if yuur EBTB seasoning doesn't have salt in it

Sandwiches:

  • 4 slices of bacon
  • 2 cups spring mix/greens
  • 4 tomato slices
  • everything but the bagel seasoning
  • 4 english muffins I love the Glutino brand of gluten free
  • optional to add avocado or mayo to your sandwich

Let's Make It

Nutriton facts will vary with the english muffin used. I based these nutriton facts using the glutino brand which are higher in calories than a sourdough or whole wheat.

You can use any two of the meals in this series to get your meal prep done in just about and hour, give or take!

Having your breakfast and lunch ready for the week helps you stay on track with your nutriton, saves you time and money! I truly beleive that meal prep does not need to be over complicated, take too much time or be boring!

I always get asked- “do you ever get tired of eating the same thing all week?” and the answer is, no! Not when the food taste good! I give plenty of variety in these preps and keep it simple!
