Strawberry Cheesecake Baked Oats
Ingredients
Oat Base
- 2 cups old-fashioned oats
- 1 cup cottage cheese
- 2 eggs
- 1 cup milk any kind works
- 2 scoops vanilla protein powder
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 2-3 tablespoons honey or maple syrup
Cheesecake Swirl
- 4 ounces cream cheese softened
- 2 tablespoons Greek yogurt
- 1-2 tablespoons honey or maple syrup
Strawberry Layer
- 1½ cups chopped strawberries fresh or frozen
Let's Make It
- Preheat oven to 375°F. Spray an 8×8 baking dish.
- Add oats, cottage cheese, eggs, milk, protein powder, baking powder, vanilla, and honey to a blender. Blend until completely smooth.
- Pour batter into prepared baking dish.
- Scatter chopped strawberries evenly over the top.
- In a small bowl, mix cream cheese, Greek yogurt, and honey until smooth.
- Drop spoonfuls of the cheesecake mixture over the batter and gently swirl with a knife.
- Bake for 30–35 minutes, until the center is set.
- Let cool slightly, then slice into 6 servings.
