Spooky High Protein Pudding Cups

This high protein snack is great for adults, whether you want to indulge on a healthy treat or meal prep a few, but my kiddos love it too!

With halloween right around the corner I took our favorite after school snack and made these spooky pudding cups for the kids!

 

Getting my  kids to eat enough protein has always been a struggle so I like to sneak it in wherever I can. They have no idea that one of their favorite treats is actually high in protein- it’s a win win for both of us!

 

Ingredients:

  • low fat cottage cheese
  • greek yogurt:  I use two good greek yogurt for a low sugar option
  • chocolate protein powder: I use Truvani 
  • cocoa powder
  • honey 
  • vanilla extract

High Protein Pudding

You can make this for a high protein snack when you are craving something sweet or serve for a spooky treat for the kiddos!

Equipment

  • food processor or blender

Ingredients
  

  • 1 cup low fat cottage cheese
  • 1/2 cup plain or vanilla greek yogurt I did Two Good vanilla greek yogurt because it's low in sugar
  • 1 scopp chocolate protein powder
  • 1 tsp cocoa powder
  • 1 tsp vanilla extract
  • 2 tbsp honey

for the spooky cups:

  • marshmallow fluff
  • plastic cups
  • whip cream
  • black sharpie
  • crumbled cookies or brownies I used natures bakery brownies
  • gummy worms or fingers

Let's Make It
 

  • Blend all of the pudding ingredients in a food processor or blender. You may need to add 2-3 tbsp of water depending on the thickness of the pudding.
  • In a clear cup use a spoon to add the marshmallow fluff to the sides of the cup to make it look like a ghost.
  • Draw on the eyes on the outside of the cup and then fill the cup with the pudding, ship cream, brownies or cookies.
  • Top with gummy worms or fingers!
