Sheet Pan Gnocchi, chicken sausage + sun Dried Tomatoes
This easy sheet pan dinner is one you will want to add into your weekly rotation. The flavors of the roasted chicken sausage + sun dried tomatoes come together so well for the perfect simple, yet flavorful dinner!

I love a sheet pan meal because the are so effortless and make for easy clean up, but this one is even easier because we are using chicken sausage for a simple protein and really only have to chop a few veggies. With less than 5 minutes of prep time and 20 minutes in the oven this can be on your table in 30 minutes!
Ingredients:
- chicken sausage– something with garlic + herbs will taste best
- gnocchi- potato or cauliflower will work
- sun dried tomatoes– in olive oil, drained
- asparagus
- salt + pepper
- garlic powder
- italian seasoning
- olive oil
- lemon juice
- parmesan cheese
- caesar salad– I love eating this served over a crispy caesar salad, but it is totally optional

This meal can easily be doubled to make more servings and makes for great leftovers! Two out of three of my kids really enjoyed this meal, as always because I have one very picky eater!
I think this meal would even taste great with cubed chicken breast if you do not have chicken sausage on hand.
Make sure to buy sun dried tomatoes in oil so they don’t burn as easy. You can even use the oil from the tomatoes for the olive oil needed for the dish to level up the flavor just a bit!

Ingredients
- 12 oz chicken sausage of choice- sliced I used an herb + garlic
- 8 oz gnocchi
- 1 large bunch of asparagus about 3 cups chopped
- 3/4 cup sun dried tomatoes
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp italian seasoning
- salt + pepper to taste
- 1 tbsp lemon juice
- 1/4 cup parmesan cheese
Let's Make It
- Preheat the oven to 425℉
- Chop the ends off of the asparagus and discard, then chop the asparagus in half.
- On a large sheet pan layer the gnocchi, chicken sausage, asparagus + sun dried tomatoes. Season with salt, pepper, garlic + italian seasoning, drizzle with olive oil + lemon juice.
- Place the baking sheet in the oven and roast for 20 minutes or until browned. If the sun dried tomatoes are starting to burn, stir and continue to roast
- Once done top with parmesan cheese and serve! I love eating this oven a caesar salad to level it up just a little bit, but it's just as good by itself!
