I’m always looking for dinners that check a few very specific boxes in our house: ready in about 30 minutes, healthy but still craveable, high protein, something my kids will actually eat, and bonus points if it works for meal prep. Honestly, it’s quickly climbing into my top 10 favorite dinners lately. It’s colorful, full of flavor, and the combination of smoky chipotle chicken, crispy sweet potatoes, and creamy elote corn is just so good. The flavors feel a little elevated but the recipe itself is ridiculously simple.

Sheet Pan Chipotle Lime Chicken with Toasted Sweet Potatoes and Elote Corn
Ingredients
Chipotle Lime Chicken
- 1½ lbs chicken breast or thighs
- 2 tbsp olive oil
- juice of 1 lime
- 1 tbsp honey
- 1 tbsp chipotle in adobo or 1 tsp chipotle powder
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp pepper
Sweet Potatoes
- 2 large sweet potatoes diced small
- 1 tbsp olive oil
- ½ tsp chili powder
- ½ tsp garlic powder
- salt and pepper
Elote Topping
- 1 cup corn
- ¼ cup mayo or Greek yogurt
- ¼ cup cotija cheese
- juice of ½ lime
- 1 tbsp chopped cilantro
- chili powder or Tajin
Optional Garnishes
- avocado
- pickled onions
- cilantro
- lime wedges
Let's Make It
- Preheat oven to 425°F.
- Toss diced sweet potatoes with olive oil, chili powder, garlic powder, salt and pepper. Roast 10 minutes.
- Mix chicken with olive oil, lime juice, honey, chipotle, garlic powder, cumin, paprika, salt and pepper.
- Push potatoes to one side of the pan and add chicken. Roast another 12–15 minutes until chicken is cooked through.
- Stir together corn, mayo or Greek yogurt, cotija, lime juice, cilantro and chili powder.
- Serve chicken and sweet potatoes topped with elote mixture and optional garnishes.
