Sheet Pan Cajun Shrimp + Potatoes

This meal is something between a shrimp boil and jambalaya, all roasted on one sheet pan. It’s super easy and so fresh- great for summer BBQ’s + entertaining!

I love this meal for an easy summer dinner, the combination of flavors is so fresh and reminds me so much of a shrimp boil without the mess!

 

Ingredients:

  • baby yukon gold/dutch potatoes: these get crispy + tender, but you could also use red potatoes

  • shrimp: peeled + deveined. I really do not care for farm raised shrimp, so I always buy fresh or wild caught.

  • chicken sausage: fully cooked- I love a spicier sausage for this, something cajun or with jalapeno

  • bell peppers

  • onions

  • mexican stewed tomatoes: these are in a can, found with the canned tomatoes! I would not skip these, it adds so much flavor!

  • cajun seasoning

  • butter

  • olive oil

  • parsley

  • chipotle tabasco sauce: adds a smoky, spicy kick at the end! 

You will need an extra large baking tray for this meal!

 

I love a extra large baking tray for sheet pan meals! The extra cooking space gives the food enough room to cook and get crispy instead of steam and get mushy from being over crowded!

 

I know I have shared this pan so many times, but if you don’t have one yet, you need to get one! It is very inexpensive and will save you so much time and stress in the kitchen!

This meal would make a great party appetizer to serve at your summer BBQ’s

 

because this meal is so easy and effortless, I think it would be great serve poolside or for the 4th of july for your guest to munch on! It would be so easy to double the batch on two sheet pans to feed a large crowd, just don’t cook both pans at the same time. You will need to cook them separately, for even cooking.

30 minute busy mom dinner series

I started this series thinking it would be a few quick and easy options for busy weeknights, but I really don’t see this series ever ending or at least anytime soon! 

obviously you don’t have to be a mom to make these meals and enjoy them, but I did set out with a purpose and that was to help moms feel a little less stressed in the kitchen when it came to putting easy + healthy meals on the table for their family!

Sheet Pan Cajun Shrimp + Potatoes

Equipment

  • extra large baking tray linked above

Ingredients
  

  • 1 1/2 lbs baby yukon gold potatoes sliced in half
  • 1 lb shrimp peeled + deveined
  • 12 oz chicken sausage fully cooked jalapeno, cajun, something with a kick
  • 2 green bell peppers diced into 1 inch chunks
  • 1 cup white onion diced into 1 inch chunks
  • 14.5 oz mexican stewed tomatoes drained
  • 3 tbsp olive oil
  • 3 tbsp butter
  • 2-3 tbsp cajun seasoning
  • fresh parsley chopped
  • lemon juice +chipotle tabasco sauce for topping

Let's Make It
 

  • Preheat your oven to 425℉
  • Wash and dry your potatoes and then slice them in half, longways.
  • Add the potatoes to an extra large baking tray, drizzle on 1 tbsp of olive oil and 1 tbsp of cajun seasoning. Give the potatoes a good toss in the olive oil + seasoning before flipping them all face side down on the baking tray.
  • Pop the potatoes into the oven and set the timer for 12 minutes!
  • In the meantime, slice the chicken sausage and chop the bell peppers + onions.
  • After 12 minutes, take the potatoes out of the oven and add the bell peppers, onions, shrimp, sausage + mexican stewed tomatoes to the pan, toss it all around to spread it out all over the pan. Season everything with more cajun seasoning, about another 1-2 tbsp depending on the spice level.
  • Place the pan back into the oven for another 12 minutes or until the shrimp is cooked and the potatoes are tender.
  • Top this meal off with fresh parsley, lemon juice and I love to add a little but of chipotle tabasco sauce to the top!
