Roasted Chicken Sausage + Veggie Bowl with Pineapple Jalapeno Rice

This quick + easy meal prep comes together in under 25 minutes!

Everyone loves a sheet pan meal and this one is so so easy!

 

On the weeks where i feel too busy or have no motivation to cook, I always do a chicken sausage! It’s so easy to just chop it up- throw in a carb + veggies and you’re done! I did want to fancy this one up a bit with some Jalapeno Pineapple Rice and I know you will love it!

Ingredients:

 

  • jasmine rice-  I love jasmine for this recipe, but you can do brown rice if you want.
  • chicken sausage- whatever one you like, but try to buy nitrate free!
  • crushed pineapple in a can- I love the Golden Farms brand because it’s all natural and has absolutely no added sugar! I find it at Walmart.
  • broccoli slaw
  • bell peppers

Pro Tips:

this meal can be made- start to finish in under 25 minutes!

  • I love cooking on my big sheet baking pan– it allows for you to fit more on one pan with proper space so that everything can still cook evenly! If you don’t have one, I highly suggest picking one up to help you meal prep a little more efficiently!
  • I used broccoli slaw because it was easy, but use whatever veggies you have on hand.
  • I always cook at a high temp and on the top rack of the oven.
  • I also use a rice cooker or instant pot to cook my rice perfectly!

Tips for this Meal Prep

I paired this meal prep with the Mini Hash Brown Egg Bakes. I was able to knock out this meal prep in about 45 minutes with nothing left to but put the egg bakes away after they cooled down!

Here is how I did it-

  • start by getting the hash browns into the oven.
  • chop all of your veggies  and get the rice in the instant pot to cook.
  • next I chopped the chicken sausage and then added it to a sheet pan with the broccoli slaw and peppers- get that into the oven.
  • While the chicken sausage + veggies cook- make the egg bakes so you can just pop them into the oven after the chicken sausage is done.
  • Take out the chicken sausage and turn the oven down to 375- add the egg bakes into the oven
  • Put together the chicken sausage meal while
  • clean up while the egg bakes are finishing up- once they are done, let them cool completely before putting them away.

Roasted Sausage + Veggie Bowl with Pineapple Jalapeno Rice

This quick + easy meal prep comes together in uner 20 minutes!
Servings 4

Ingredients
  

  • 12 oz chicken sausage any kind will work- just buy nitrate free
  • 1 cup jasmine rice
  • 1 cup water
  • 1/4 tsp salt
  • 1/2 cup crushed pineapple all natural (no sugar)- with the juice
  • 1 jalapeno diced + seeded
  • 2 bell peppers sliced
  • 3 cups cups broccoli slaw mix one small bag
  • 1 tbsp olive oil

Let's Make It
 

  • Preheat the oven to 425°
  • Add 1 cup of rice to the instant pot with 1 cup of water, 1/4 tsp salt, 1/2 cup crushed pineapple + 1 jalapeno- stir and cook the rice using the rice setting.
    If cooking the rice on the stove, cook the rice first, add in the jalapeno for the last 5 minutes and the pinapple after its cooked.
  • On a large sheet pan add the sliced chicken sausage, sliced bell peppers + broccoli slaw- drizzle with about 1 tbsp of olive oil and bake in the oven for 15 minutes.
  • Once the rice and the sausage are cooked add into each container:
    - 1/2 cup of rice
    - 3/4 cup of the veggie mixture
    - bell peppers
    3 oz of chicken sausage
  • Store in the fridge for up to 4 days!
