Pumpkin Pie Parfaits

This high protein healthy dessert is a beautifully blended layer of pumpkin puree, cottatge cheese + maple syrup- topped with graham crackers and pecans!

IDK about you, but I am ready for all things pumpkin! 

I am a sucker for pumpkin pie and a little obsessed with cottage cheese, so I had to give this seasonal classic a healthy twist.

You will need a blender, food processor or emersion blender to blend up the mixture! I am loving this set for the Beautiful Line from Walmart!

Ingredients:

 

The most creamiest, beautifully blended mixture of:

  • cottage cheese or greek yogurt
  • pumpkin puree
  • pumpkin pie spice
  • vanilla extract
  • maple syrup
  • cookies or choice: I did gluten free graham crackers
  • nuts of choice: I did pecans

Can you swap the cottage cheese for greek yogurt?

 

Yes. absolutely! 

I am NOT a greek yogurt fan at all. And some people just can’t do cottage cheese- the two are always interchangable!

Although, if you do not like the texture of cottage cheese, I will say, that when you blend it, it taste way different! It’s a super light, creamier taste and not sour like greek yogurt. Definetly give it a try, you might be surprised!

Pumpkin Pie Parfaits

This high protein healthy dessert is a beautifully blended layer of pumpkin puree, cottatge cheese + maple syrup- topped with graham crackers and pecans!

Equipment

  • emersion blender or food processor

Ingredients
  

  • cups cottage cheese
  • cup pumpkin puree
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • ½ cup tru whip

For the Toppings:

  • ½ cup crushed graham crackers or cookies
  • cup chopped pecans or walnuts

Let's Make It
 

  • Add all of the ingredients EXCEPT FOR THE TRU WHIP into a food processor, blender or mix with an emersion blender until the mixture is smooth.
  • Fold the Tru Whip into the pumpkin mixture.
  • Layer two bowls with about ⅓ cup of the mixture on the bottom and the do a layer of cruched cookies or graham crackers, another layer of the mixture, more cookies and nuts of choice!
