There’s something about puff pastry that instantly makes things feel more fun—especially when it’s wrapped around a bratwurst. These puff pastry wrapped brats are flaky, flavorful, and incredibly easy. They’re a great snack-style appetizer for the 4th of July, but honestly, I’d make them any time I want something crowd-pleasing without standing at the grill.

I originally made a version with cream cheese and jalapeño jelly—it sounded right up my alley. I spread both on the puff pastry before slicing and wrapping the brats. The flavor was bold, but it wasn’t my favorite combo texture-wise. That said, if you love that sweet heat vibe, it’s still worth trying—especially with a little tangy mustard on the side.

My personal favorite? Cream cheese with everything bagel seasoning and a drizzle of hot honey after baking. The hot honey melts into the flaky pastry, and it’s just the right mix of salty, sweet, creamy, and spicy.

You can totally make this your own. Here are five variations that I tested and loved (or my taste testers loved, even if I didn’t):

  • Pesto & Mozzarella – herby, melty, and a little fancy-feeling.

These bake beautifully golden and can be made ahead—just prep, refrigerate, and bake when you’re ready. Use a pizza cutter to slice the pastry easily, and don’t forget the egg wash for that golden finish.

  • 1 sheet puff pastry thawed
  • 4 fully cooked bratwursts or sausages
  • 1 egg beaten (for egg wash)

Cream Cheese & Jalapeño Jelly:

  • 3 tbsp whipped cream cheese
  • 2 tbsp jalapeño jelly

Everything Bagel & Hot Honey:

  • 3 tbsp whipped cream cheese
  • 2 tsp everything bagel seasoning
  • Drizzle of hot honey after baking

Spicy Mustard & Cheddar:

  • 2 tbsp spicy brown mustard
  • ½ cup shredded sharp cheddar

Caramelized Onion & Gruyère:

  • ¼ cup caramelized onions
  • ¼ cup shredded gruyère cheese

Pesto & Mozzarella:

  • 2 tbsp pesto
  • ¼ cup shredded mozzarella

Let's Make It
 

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • Roll out puff pastry into a 10x12” rectangle.
  • Spread your chosen filling across the surface.
  • Slice pastry into 1½-inch strips using a pizza cutter.
  • Wrap each brat in a strip (spiral-style or rolled).
  • Place on baking sheet, brush with egg wash.
  • Bake 20–25 minutes, until golden and puffed.
  • Optional: Drizzle with hot honey, sprinkle extra bagel seasoning, or serve with dipping sauce.
