premade egg scrambles

No time to meal prep? I got you covered with these premade egg scrambles- packed with veggies and protein, all you have to do is prep these and microwave them when it’s time to eat!

this is by far one of the easiest things i’ve ever made and i’m not gonna, lie my inspo totally came from those “just crack an egg” cups sold at the grocery store. my question is- why are people paying so much for those when it’s so simple to make? 

another question is-

 

Why are we cooking eggs in the pan or the oven, if we can save time and just cook them once in the microwave?

think about it, if we are cooking eggs for meal prep and then cooking them again in the microwave later on to warm them back up, why not save time and effort and do it all at once? 

Do eggs taste better fresh, cooked in a pan? of course! But i’m pretty sure you are here to save time, eat healthy and keep it simple. i promise, they actually taste so good cooked this way and i know you’ll love them!

What you need:

  • eggs- you will want 2 per serving
  • chicken or turkey sausage- 1oz per serving and as always, try to buy nitrate free and natural/organic
  • bell peppers- the color doesn’t matter, use what you have on hand
  • onion- red, yellow, white, green
  • spinach
  • salt
  • pepper
  • salsa- use your favorite, adds moisture and flavor

Let's Make it!

these are sooooo simple!

make sure you have small, 1-2 cup size glass meal prep containers. I prefer glass over plastic because it’s 2023 and if you don’t know yet, plastic is toxic, but you do you!

  • spray each container with olive/avocado oil spray
  • add in 2 eggs, scramble 
  • add in salt + pepper and divide the bell peppers, onion, spinach and salsa into each container
  • throw the lid on and store in the refrigerator until it’s time to eat!
  • to cook;
    • microwave for 45 seconds- stir
    • micrwave for 45 seconds- stir
    • microwave for 30 seconds
  • enjoy!

customize these with whatever combination of protein and veggies you want!

***the veggies do NOT get soggy in the eggs, but you can always add those in right before you cook them!

Premade Egg Scrambles

Ingredients
  

  • 8 eggs 2 per container
  • 4 oz cooked and chopped nitrate free chicken or turkey sausage 1oz per container
  • 1 cup chopped bell pepper
  • 1/2 cup chopped onion
  • 1 1/2 cups chopped spinach
  • 1 cup salsa
  • salt + pepper

Let's Make It
 

  • Spray each container with olive oil, crack in two eggs, beat them to scramble
    *** you will want a smaller glass or microwave safe container for these
  • Divide in all of the ingredients, season with salt + pepper, place the lid on and store in the fridge until you a ready to eat
  • To cook:
    Microwave for 45 seconds, stir with fork
    Micrwave for 45 second, stir
    Microwave for 30 seconds
    Enjoy!
  • *** The veggies do NOT get soggy in the scramble eggs, but if you prefer, add the eggs in right before you are ready to cook them!
    *** You can also cook these in the ovem if you wish!
