Philly Cheesesteak Bowl

Taking all of the flavors of a classic philly cheesesteak and adding it into a bowl with a rice + cauliflower blend with fresh peppers + mushrooms!

I love a simple meal prep and this one is so good!

Sometimes I really get burnt ot on chicken or turkey and it’s ok to do a red meat every once in a while. I did use a grass fed organic ground beef paired with the mushrooms + peppers- it’s to die for! I’ll definitely be making this one more often!

You could use ground chicken or turkey for this if you are not a red meat fan!

 

Ingredients:

  • ground beef
  • coconut aminos
  • onion powder 
  • pepper
  • parsley 
  • onions
  • bell peppers
  • mushrooms
  • jasmine white rice
  • cauliflower rice
  • mozzarella cheese

A philly cheesesteak without all the cheese?

 

This is meal prep so we do have to keep it a little healthy! 

I love a good philly cheesesteak, but you really don’t need all of the cheese to make it taste good! I’m using coconut aminos to bring the philly flavor to the “cheesesteak” and using a ground meat instead of steak because I think it taste better reheated.

 

Jasmine Rice + Cauliflower Blend

 

This is one of my favorite things to do to bulk up a meal without adding a ton of calories. Plus, I’m sneaking in more veggies! You can’t really taste the cauliflower at all and you don’t even have to cook it (if you are using frozen), just add it right into the bowl and you won’t even notice, promise!

Tips for this Meal Prep

I paired this meal prep with the Everything + the Bagel Egg Salad. Both of these meals took me less than an hour to make. This is how I did it-

  • If I would have boiled my own eggs, I would have done that first.
  • While the eggs are cooking- chop the peppers, onions + mushrooms and make the rice
  • Once the eggs are done, start browning the meat for the philly bowl, then the peppers
  • put together the philly bowls while the eggs are still cooling down.
  • Start cooking the bacon, peel the eggs and toast the bagels (you can do all of that at once)
  • Mix together the egg salad ingredients 
  • put together the egg salad containers and start the clean up

Philly Cheesesteak Bowl

Taking all of the flavors of a classic philly cheesesteak and adding it into a bowl with a rice + cauliflower blend with fresh peppers + mushrooms!
Servings 4

Ingredients
  

  • 1 lb ground beef or turkey
  • 2 bell peppers
  • ½ of a yellow onion sliced
  • 1 cup of mushrooms sliced
  • 2 tsp onion powder
  • 1 tbsp minced garlic
  • ¼ tsp black pepper
  • salt to taste
  • 1 tsp parsley
  • ¼ cup coconut aminos
  • ½ cup shredded mozzarella cheese
  • 1 ⅓ cup cooked jasmine rice
  • 6 oz frozen cauliflower rice

Let's Make It
 

  • Over medium high heat cook the ground beef, breaking it up as it browns. Once the meat is cooked through add in the onion powder, minced garlic, parsley, salt/pepper + aminos. Stir and turn off the heat.
  • Take the meat out of the pan and add in 1 tsp of olive oil, brown the peppers for 3 minutes and then add in the mushrooms- cook for an additional 2-3 minutes.
  • In each container add ⅓ cup of rice, 2 oz of frozen cauliflower rice (no need to cook it first), 4 oz of meat and the peppers, onions + mushrooms. Top with mozzarella cheese!
  • Store in the fridge for up to 4 days!
  • To reheat- crack the lid and microwave for 1:35
