Mini Hash Brown Egg Bakes
These mini egg bakes are loaded with hash browns, veggies + ham and are perfect for on the go!

Meal Prep is 100x easier when there is nothing clean up- thats why I love comming up with recipes to make in these glass meal prep containers!
The best part about using these containers is- while its cooking you can clean up and the only thing left to do is throw the lid on and pop the contianers into the fridge!
These Mini Egg Bakes are a balanced breakfast that you can throw together in less than 5 minutes and probably one of my favorite breakast! There is just something about ham, eggs, cheese + veggies that I love- it’s like comfort food, ya know?
Ingredients:
- diced ham
- eggs
- milk of choice
- bell pepper
- green onions
- black pepper
- cheddar cheese
- hash browns– I just buy the frozen patties and cook them in the air fryer first for about 5 minutes.

Pro Tips:
- I used a ham steak for this recipe- I feel like it just adds so much flavor, but you can use sliced ham or whatever protein you want- like bacon or sausage.
- Make sure you generously spray the containers with olive oil before adding in any of the ingredients. This will help the egg from sticking to the glass.
- I probably wouldn’t add any salt to this recipe because there is naturally a lot of sodium in the ham.
- Place a baking sheet under the glass contianers before putting them into the oven- this just helps with transporting them in and out of the oven.
- Reheat these in the microwave for 1:30.
- I love topping min with salsa when I’m ready to eat!
Tips for this Meal Prep
I paired this meal prep with the Roasted Chicken Sausage + Veggie Bowl with Pineapple Jalapeno Rice. I was able to knock out this meal prep in about 45 minutes with nothing left to but put the egg bakes away after they cooled down!
Here is how I did it-
- start by getting the hash browns into the oven.
- chop all of your veggies and get the rice in the instant pot to cook.
- next I chopped the chicken sausage and then added it to a sheet pan with the broccoli slaw and peppers- get that into the oven.
- While the chicken sausage + veggies cook- make the egg bakes so you can just pop them into the oven after the chicken sausage is done.
- Take out the chicken sausage and turn the oven down to 375- add the egg bakes into the oven
- Put together the chicken sausage meal while
- clean up while the egg bakes are finishing up- once they are done, let them cool completely before putting them away.

Mini Hash Brown Egg Bakes
Equipment
- individual glass meal prep containers (2 cup size)
- or an 8x8 baking pan
Ingredients
- 2 hash brown patties
- 8 eggs
- 1/4 cup milk of choice optional
- 1 bell pepper chopped
- 1/4 cup green onions diced
- 1 cup diced ham
- 1/4 tsp black pepper
- 1/3 cup shredded cheddar cheese
Let's Make It
- Pre-cook the hash browns in the oven at 425° or in the air fryer until golden brown and crispy
- In the meantime- chop the veggies and scramble the eggs with 1/4 cup of milk + 1/4 tsp of pepper.
- Once the hash browns are done- lower the oven temp to 375°
- Spray each glass meal prep contianer with olive oil and then add 1/2 of a hash brown into each container with the ham, bell peppers, green onions- add about 1/2 cup of egg mixture over the veggies and the top each one off with cheese.
- Place the contianers on a sheet pan
- Bake in the oven for about 20-25 minutes or until the eggs are firm
- Do not cover the egg bakes until they are compeletly cool.
- Store in the fridge for up to 4 days!
