Meal Prep Zucchini Lasagna
Using indivdual meal prep containers- this zucchini lasagna is able to be prepped, cooked and eat all in the same dish! It has layers oz marinara meat sauce, zucchini + ricotta cheese- making this keto friendly!

We all love a one pan meal, but cooking your meal prep in the actual container itself is next level!
I love lasagna, but I also love to maintain a healthy lifestyle. I have been wanting to try a veggie lasagna and I knew turning zucchini into noddles would help save some calories and fit my macros! Plus, it’s actually keto friendly for all of you ketonians out there (i just made that up, idk if that’s even a word).
Ingredients:
- zucchini- pick up 3, eventhough you will probably only use two.m You might not get perfect slices until you get the hang of it.
- ground meat- turkey, chicken or beef
- your favortie marinara- love the one from mezzetta.
- ricotta cheese
- spinach- fresh or frozen
- salt + pepper
- minced garlic
- mozzarella cheese

I know this might seem like an intimidating dish, but it’s really so simple!
I will link the veggie slicer + the meal prep contianers I use below.
If you don’t have a veggie slicer already or don’t feel like buying one, you can always use a cheese slicer or a knife to cut thin strips out of the zucchini.
This meal can also be made in a 9×13 baking dish and cut into servings if you do not have glass meal prep contianers.
To fit my macros I have cut back on the cheese for this dish, but feel free to add more if you like!
The Prep:
I have added the full recipe below, but here are a few tips for this meal prep lasagna-
- start by making your meat sauce just the way you like it. I keep mine simple with just meat and sauce because we are adding in more flavors + veggies as we build the lasagna.
- after building the lasagna you will want to place foil over the containers so that the cheese doesn’t brown before the lasagna is cooked.
- Place containers on a baking sheet for easy transportation and to catch any spill over.
- Make sure you cool completely before placing the lids on to help prevent bacteria from growing.
Tips for this Meal Prep
Cooking two meals at the same time in less than an hour can be challenging, but here are a few of my tips to get it done!
I have prepared this meal prep with the Southwest Quinoa Breakfast Bowl.
- start by making the quinoa
- after you have that going, make the meat sauce
- as the meat sauce and the quinoa are cooling down, make the ricotta mixture and slice the zucchini
- Build the lasagna and get that into the oven
- while the lasagna is cooking, scramble the eggs and cook the peppers
- depending on how fast you work, you might be able to build the quinoa bowls before the lasagna is done
- take the foil off of the lasagna and put away the quinoa bowls
- take the lasagna out of the oven
- clean up while the lasagna is cooling down
You should be able to have everything done and cleaned up within the hour, but the lasagna will need a bit longer to cool down!

Meal Prep Zucchini Lasagna
Equipment
- 4 oven safe glass meal prep containers mine are linked in the blog post!
- a veggie or cheese slicer mine is linked in the blog post!
Ingredients
- 3 zucchini medium size- you only will use about 2, but get 3 just in case
- 1 jar of your favorite marinara sauce I love this one from Mezzetta
- 1 lb ground turkey/chicken/beef
- 1 cup part skim ricotta cheese
- 1 egg
- ¼ cup chopped spinach- fresh or frozen
- ¼ tsp salt
- ¼ tsp pepper
- 1 tsp minced garlic
- ¾ cup mozzarella cheese
Let's Make It
- Over medium high heat- brown your meat and then add in the jar of marinara sauce. Let that sit while you slice the zucchini.
- Preheat the oven to 425°
- Using a veggie slicer or cheese grater- slice the zucchini into strips. If you are getting good slices, you will only need about 2 whole zucchini for 4 servings. Each container needs about 8-10 slices.
- In a bowl mix together the ricotta cheese, egg, spinach, slat + pepper and garlic.
- Spread a spoonfull of the sauce mixture on the bottom of each container, then layer with about 4-5 zucchini slices- just like you would with lasagna noodles.
- Add a layer of the ricotta mixture over the zucchini and then add another layer of the zucchini over the ricotta.
- Add one more layer of meat sauce over the zucchini, top with a little mozzarella, cover with foil and bake in the oven for about 30 minutes.
- Take the foil off and brown the lasagna for another 5-10 minutes.
- Once the lasagna has cooled down, place them in the fridge for up to 4 days.
- Reheat with the lid loosely covering the lasagna for about 2 minutes in the microwave.

You can use any two of the meals in this series to get your meal prep done in just about and hour, give or take!
Having your breakfast and lunch ready for the week helps you stay on track with your nutriton, saves you time and money! I truly beleive that meal prep does not need to be over complicated, take too much time or be boring!
I always get asked- “do you ever get tired of eating the same thing all week?” and the answer is, no! Not when the food taste good! I give plenty of variety in these preps and keep it simple!
