If there’s one thing I’ll never get tired of meal prepping, it’s breakfast sandwiches. As a busy mom of three, mornings are chaos — someone’s missing a shoe, someone else wants a different cereal, and I’m trying to get coffee down before the day officially begins. Having these Freezer Breakfast Sammies ready to grab is my sanity saver.

These sandwiches are everything you want in a breakfast — protein-packed, filling, and customizable. The eggs are blended with cottage cheese (trust me on this one!) for extra protein and a creamy texture that reheats beautifully. Add crispy bacon, a sprinkle of cheddar, and a layer of everything bagel cream cheese… and you’ve got the kind of breakfast that makes you feel put-together even when you’re not.

I like to bake the eggs as one big sheet — it’s faster and easier than cooking individually, and it gives you perfect circles when you cut them out. The jalapeño is optional but adds a subtle kick that pairs perfectly with the creamy cheese filling.

If you’re gluten-free, I highly recommend the Glutino brand English muffins. They toast up perfectly and hold their structure, even after being frozen and reheated.

Why They’re Perfect for Busy Mornings

I love recipes that let me feel like I’m winning the morning — even when I hit snooze three times. These sammies are one of those. You can pull one from the freezer, pop it in the microwave, and have a hot, balanced breakfast in under two minutes.

They also make an easy post-workout meal or after-school snack for kids. I’ve even packed them for road trips — they thaw perfectly and taste amazing warm or cold.

Pro Tip

If you’re doing a big meal prep day, bake your eggs while the oven’s already on for something else — like muffins or roasted veggies. It saves time and energy. You can also make the cream cheese filling ahead and keep it refrigerated for up to 5 days.

Final Thoughts

These Freezer Breakfast Sammies check every box: high protein, customizable, family-friendly, and freezer-friendly. They taste like something you’d grab from a café drive-through — except you made them in your own kitchen in 30 minutes flat.

If your mornings feel nonstop, this is your new go-to. Make a batch this weekend, wrap them up, and start your week knowing you’ve got breakfast handled.

Tips for this Meal Prep

Meal Prep + Storage Tips

  • Batch Prep: You can easily double this recipe to make a dozen sandwiches. They’ll all fit in a gallon freezer bag once wrapped in parchment.

  • Storage: These stay fresh in the freezer for up to 2 months. Label your bag with the date so you can rotate older ones first.

  • Reheating: Microwave directly in the parchment for 1 minute, flip, and heat another 30 seconds. If you prefer a crisp muffin, unwrap and finish in the air fryer for 1–2 minutes.

  • Customizations:

    • Swap bacon for turkey sausage or ham.

    • Use a slice of pepperjack or provolone instead of cheddar.

    • Add veggies like spinach, red pepper, or green onion to the egg mixture.

    • Go dairy-free with vegan cheese and a cashew-based cream cheese spread.

  • ¾ cup low-fat cottage cheese
  • Salt + pepper to taste
  • 1 sliced jalapeño optional
  • ½ cup shredded cheddar cheese
  • 6 English muffins
  • 6 slices bacon

  • 1 tbsp Everything But the Bagel seasoning

Let's Make It

  • Preheat oven to 375°F.
  • In a bowl, whisk together eggs, cottage cheese, salt, and pepper. (I like to blend mine with an immersion blender for a fluffier texture.)

  • While the eggs bake, toast the English muffins and cook bacon.
  • Mix the softened cream cheese with Everything But the Bagel seasoning.
  • Once eggs are baked, use a jar lid or cup to cut circles that fit your muffins.
  • Spread cream cheese on each muffin, layer with egg round and bacon.
  • Wrap each sandwich in parchment paper, then store in a large freezer bag for up to 2 months.
