Ingredients
  

  • 10 eggs
  • ¾ cup low-fat cottage cheese
  • Salt + pepper to taste
  • 1 sliced jalapeño optional
  • ½ cup shredded cheddar cheese
  • 6 English muffins
  • 6 slices bacon

Cream Cheese Filling:

  • 3 oz softened cream cheese
  • 1 tbsp Everything But the Bagel seasoning

Let's Make It
 

  • Preheat oven to 375°F.
  • In a bowl, whisk together eggs, cottage cheese, salt, and pepper. (I like to blend mine with an immersion blender for a fluffier texture.)
  • Line a small baking tray with parchment paper. Pour in the egg mixture, top with sliced jalapeño and cheddar, and bake 16–18 minutes, until set.
  • While the eggs bake, toast the English muffins and cook bacon.
  • Mix the softened cream cheese with Everything But the Bagel seasoning.
  • Once eggs are baked, use a jar lid or cup to cut circles that fit your muffins.
  • Spread cream cheese on each muffin, layer with egg round and bacon.
  • Wrap each sandwich in parchment paper, then store in a large freezer bag for up to 2 months.
