Jalapeño Popper Freezer Breakfast Sammies

10 eggs ¾ cup low-fat cottage cheese Salt + pepper to taste 1 sliced jalapeño optional ½ cup shredded cheddar cheese 6 English muffins 6 slices bacon Cream Cheese Filling: 3 oz softened cream cheese 1 tbsp Everything But the Bagel seasoning
Preheat oven to 375°F.
In a bowl, whisk together eggs, cottage cheese, salt, and pepper. (I like to blend mine with an immersion blender for a fluffier texture.)
Line a small baking tray with parchment paper. Pour in the egg mixture, top with sliced jalapeño and cheddar, and bake 16–18 minutes, until set.
While the eggs bake, toast the English muffins and cook bacon.
Mix the softened cream cheese with Everything But the Bagel seasoning.
Once eggs are baked, use a jar lid or cup to cut circles that fit your muffins.
Spread cream cheese on each muffin, layer with egg round and bacon.
Wrap each sandwich in parchment paper, then store in a large freezer bag for up to 2 months.
