High-Protein Warm Vanilla Apple Oat Bake

This high-protein warm vanilla apple oat bake has all the cozy fall flavors of baked oatmeal — sweet apple, cinnamon, and vanilla — but with an extra protein boost from Greek yogurt and Fairlife milk. It’s creamy, nourishing, and perfect for meal prep or a cozy fall morning breakfast.

If cozy fall mornings had a flavor, it would taste like this High-Protein Warm Vanilla Apple Oat Bake. The smell alone — warm cinnamon, sweet baked apples, and vanilla drifting through the kitchen — makes it feel like the start of a slow Saturday morning (even when it’s a busy weekday).

This recipe takes the classic baked oatmeal you know and love and gives it a protein-packed twist with Greek yogurt and Fairlife milk. The result is a creamy, custardy oat bake that feels indulgent but keeps you full all morning. The Greek yogurt makes it super moist, the Fairlife adds creaminess and protein, and a scoop of vanilla protein powder gives it an extra boost if you’re tracking macros.

I love to serve mine warm straight from the oven with a pat of peanut butter that melts over the top and a splash of milk poured around the edges. It’s nostalgic, cozy, and honestly tastes like dessert for breakfast. You can even prep it ahead for the week — just portion it into containers and warm it up in the microwave with a little milk when you’re ready to eat.

And because I can’t leave well enough alone when it comes to flavor, I’ve started adding dried cranberries or chopped pecans for a little texture. You could easily swap in pears or use pumpkin pie spice instead of cinnamon for a fall remix.

This recipe is everything I want this time of year — quick to throw together, warm and comforting, and healthy enough to eat every day. Whether you’re baking it for a cozy Sunday brunch or for your weekday meal prep, it’s a simple way to bring a little fall magic into your mornings.

Storage Tips:

  • Fridge: Store in an airtight container up to 5 days.

  • Reheat: Microwave individual portions with a splash of milk for 30–45 seconds.

  • Freeze: Slice, wrap individually, and freeze up to 2 months. Reheat from frozen for 1–2 minutes.
