2 cups rolled oats 1 cup Fairlife milk or milk of choice 1 cup plain Greek yogurt for creaminess + protein 2 eggs 2 tbsp maple syrup or honey 1 scoop vanilla protein powder optional but boosts protein 1 tsp cinnamon 1 tsp Nielsen-Massey Madagascar Bourbon Vanilla Extract 1 large apple diced Optional: ¼ cup dried cranberries for extra sweetness Optional toppings: Chopped pecans Peanut or almond butter drizzle Warm milk poured over top Dollop of Greek yogurt
Preheat oven to 375°F and lightly grease an 8x8 baking dish.
In a large bowl, whisk together eggs, Greek yogurt, milk, maple syrup, vanilla, and cinnamon until smooth.
Stir in oats, protein powder (if using), and diced apples until well combined.
Pour mixture into the baking dish and smooth the top.
Bake for 25–30 minutes, or until the center is set and golden on the edges.
Serve warm with a spoonful of peanut butter and a splash of milk over top.
