- 1/4 cup + 2 tbsp almond milk
- 1 tbsp maple syrup or sweetener of choice
- 1/2 cup chocolate protein powder
- 1/8 cup chocolate chips I like to add a little more for extra crunch
Let's Make It
- Make the truffle dough:In a mixing bowl, combine cashew butter, almond milk, maple syrup, peppermint extract, and vanilla extract. Stir until smooth.Add cocoa powder and protein powder- mix until well incorporated. Fold in the chocolate chips.If the mixture feels too soft, refrigerate for 10-15 minutes to firm up slightly.
- Shape the truffles:Scoop out small portions of the mixture (about 1 tablespoon each) and roll into balls. Place the balls on a parchment-lined tray.
- Prepare the chocolate coating:In a microwave-safe bowl, melt the white chocolate chips and coconut oil in 15-20 second intervals, stirring between each, until smooth.
