High Protein White Chocolate Peppermint Truffles

Ingredients
  

  • 1/2 cup cashew butter
  • 1/4 cup + 2 tbsp almond milk
  • 1 tbsp maple syrup or sweetener of choice
  • 1/2 cup chocolate protein powder
  • 1/8 cup chocolate chips I like to add a little more for extra crunch

Let's Make It
 

  • Make the truffle dough:
    In a mixing bowl, combine cashew butter, almond milk, maple syrup, peppermint extract, and vanilla extract. Stir until smooth.
    Add cocoa powder and protein powder- mix until well incorporated. Fold in the chocolate chips.
    If the mixture feels too soft, refrigerate for 10-15 minutes to firm up slightly.
  • Shape the truffles:
    Scoop out small portions of the mixture (about 1 tablespoon each) and roll into balls. Place the balls on a parchment-lined tray.
  • Prepare the chocolate coating:
    In a microwave-safe bowl, melt the white chocolate chips and coconut oil in 15-20 second intervals, stirring between each, until smooth.
  • Coat the truffles:
    Using a fork, dip each truffle into the melted white chocolate, letting the excess drip off. Place the coated truffles back on the parchment-lined tray.
  • Add the peppermint crunch:
    Sprinkle crushed peppermint candies over the coated truffles before the chocolate hardens.
  • Chill and serve:
    Refrigerate the truffles for 10-15 minutes, or until the chocolate shell sets. Store in an airtight container in the fridge for up to a week.
