Meal Prep in 1 Hour

You can use any two of the meals in this series to get your meal prep done in just about and hour, give or take!

Having your breakfast and lunch ready for the week helps you stay on track with your nutriton, saves you time and money! I truly beleive that meal prep does not need to be over complicated, take too much time or be boring!

I always get asked- “do you ever get tired of eating the same thing all week?” and the answer is, no! Not when the food taste good! I give plenty of variety in these preps and keep it simple!

Ingredients

This burger brings all the flavors of summer- the grilled onion and the pineapple add so much flavor! Feel free to customize this however you want, you can swap out the veggies or even add  some teriyaki sauce!

Servings: 4 burgers

  • ground turkey or chicken
  • sriracha
  • coconut aminos or soy sauce
  • honey
  • red pepper flakes
  • garlic
  • salt
  • red onion rings- slice a red onion into rings, abou 1/8inch thick
  • Pineapple Rings- I love using Golden Farms Pineapple Rings for this recipe! Golden Farms is 100% organic, non GMO and has no added sugar. This Pineapple comes straight from Costa Rica and it taste so so fresh from a can! Plus, you just cant beat the price!
  • zucchini sticks- I just cut them in half and then into half again to make 8 sticks per zucchini 
  • coleslaw mix- totally optional, just adds in some extra veggies and fills the bowl a little. 

The Prep

You can cook these burgers in a pan or on a grill. I just went with a pan because it’s easier for meal prep, but I think cooking them on the grill would add so much flavor!

The Burgers are so good, they would also be great for dinner with the fam, too!

  • In a bowl mix together all of the ingredients for the burger and roll into 4 patties.
  • Over medium high heat, cook the onion slices in a little bit of olive oil for 2-3 minutes, add the pineapple rings on top and then flip the onion slices over to cook the pineapple rings for and additional 3-4 minutes. Set those aside.
  • In the same pan, add in about 1 tbsp of olive oil and cook the zucchni sticks for about 3 minutes before adding in about 1/4 cup of pineapple juice, place the lid on the pan and cook for about 3-4 minutes or until the zucchini sticks start to get tender and golden brown. 
  • In that same pan, cook the burgers, flipping once until the burgers reach an internal temperature of 165°
  • In each container, add:

    – ¾ cup of coleslaw mix to the bottom

    – 1 burger, topped with pineapple and onion

    – zucchni sticks

  • Store in the refrigerator for up to 5 days!

Tips for this Meal Prep

I have paired this meal Prep with Homemade Sundried Tomato + Feta Egg Bites– both of these meals can be made in just about an hour, give or take! 

Here’s how i did it!

  • I started by chopping all of my veggies- spinach, zucchini, onions and preheated the oven.
  • Next, you’ll want to start beating the eggs with the cottage cheese and start filling up the muffin tins with spinach, feta, sun dried tomatoes and the egg mixture. Get those in the oven and set the timer for 30 minutes.
  • While those are cooking throw the onions into the pan with the pineapple.
  • When the onions are done, add in the zucchini and cook those until tender.
  • In the meantime prepare the burger mixture and roll into patties.
  • When the zucchini is done, cook the burgers.
  • Just when the burgers are done, so should the egg bites. Pull those out and let them cool down.
  • I will go ahead and start packing up the meals as things cool down and start cleaning up!

Ingredients
  

  • 1 lb ground turkey
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp sriracha
  • 1 tbsp minced garlic
  • ½ tsp ground ginger
  • ¼ tsp salt

Other Ingredients:

  • 3 large zucchini- cut into sticks
  • 4 red onion slices
  • 4 pineapple rings
  • 3 cups coleslaw mix/shredded cabbage optional

Let's Make It
 

  • In a bowl mix together all of the ingredients for the burger and roll into 4 patties.
