Meal Prep in 1 Hour!

You can use any two of the meals in this series to get your meal prep done in just about and hour, give or take!

Having your breakfast and lunch ready for the week helps you stay on track with your nutriton, saves you time and money! I truly beleive that meal prep does not need to be over complicated, take too much time or be boring!

I always get asked- “do you ever get tired of eating the same thing all week?” and the answer is, no! Not when the food taste good! I give plenty of variety in these preps and keep it simple!

Ingredients:

These Egg Bites are so customizable, you can switch out the veggies, cheese or add in some extra protein, like bacon or sausage. There is just something about the sun dried tomato and feta combo that I love though!

You guys know I have to have a complete + balanced meal and that why I’ adding in these Squeezable Pouches from Golden Farms. I always eat my breakfast after I workout and although you need protein after a workout, it’s always best to eat/drink your protein with a side of fruit. The natural sugar in the fruit helps protein process faster in your body, taking that protein straight to your muscles! These Squeezable Pouches are perfect for on the go and that’s why I love them! Plus, the flavors are incredible!

  • eggs
  • cottage cheese– this is such a key ingredient for these eggs bites, it makes them so light and fluffy- don’t skip it!
  • salt
  • pepper
  • garlic powder
  • spinach
  • Sun Dried Tomato– I always buy them in oil, the dried ones don’t soften as well. 
  • feta cheese

The Prep

These are so simple to make, but you will need a blender, food processor or immersion blender to whip up the eggs + cottage cheese!

I reccomend using a silicone muffin pan for these, it’s such a game changer! If not, use a metal muffin pan or glass meal prep containers.

  • Preheat the oven to 300°
  • In a food processor, blender or even in a small bowl, using an immersion blender, mix together the eggs, cottage cheese, salt, pepper and garlic powder for about 90 seconds, or until the eggs are nice and fluffy and  cottage cheese is blended.
  • Spray the muffin pan with olive oil spray. Evenly ditribute the spinach, sun dried tomatoes and feta cheese into each muffin cup and then fill with about 1/3 cup of the egg mixture.
  • Bake at 300° for 30 minutes.

    This recipe is a no fail! At exactly 30 minutes, these eggs will be so fluffy and easily just fall right out of the muffin tray!

  • I’m adding these into my glass meal prep containers with a handful of spinach on the bottom and making this a complete meal by adding in some Squeezable Fruit Pouches from Golden Farms (linked above).
  • Store these in the refrigerator for up to 5 days!

    To reheat, I just leave the lid cracked and cook these for 90 seconds in the microwave!

Tips for this Meal Prep

I have paired this meal Prep with Hawaiian Turkey Burgers– both of these meals can be made in just about an hour, give or take! 

Here’s how i did it!

  • I started by chopping all of my veggies- spinach, zucchini, onions and preheated the oven.
  • Next, you’ll want to start beating the eggs with the cottage cheese and start filling up the muffin tins with spinach, feta, sun dried tomatoes and the egg mixture. Get those in the oven and set the timer for 30 minutes.
  • While those are cooking throw the onions into the pan with the pineapple.
  • When the onions are done, add in the zucchini and cook those until tender.
  • In the meantime prepare the burger mixture and roll into patties.
  • When the zucchini is done, cook the burgers.
  • Just when the burgers are done, so should the egg bites. Pull those out and let them cool down.
  • I will go ahead and start packing up the meals as things cool down and start cleaning up!

  • blender. immersion blender or food processor
