Firecracker Turkey Meatballs + Cucumber Salad
Perfectly seasoned meatballs + rice noodles and the viral cucmber salad- this one does not dissapoint!

This dish is not too spicy, it definetly has a kick, but not over powering. The chili oil is pretty mild considering the name, I think you will be surprised and will probably be addicted to it, like I am.
To cut back on the spice level-
- skip the jalapenos on top of the meatballs.
- Skip the sriracha in the meatball mixture all together or add only 1 tbsp instead of 2.
Ingredients:
This was my first time making the viral cucumber salad and i have to say, it lived up to the hype for sure! I did switch the ingredients a little to cut back on cost and to use sauces I usually always have on hand.
- ground turkey or chicken
- sriracha
- sesame oil
- green onion
- jalapenos
- lime juice
- cilantro
- minced garlic
- salt
- cucumbers
- mini bell peppers– optional to use regular bell peppers cut into small slices
- fresh grated ginger– I am using fresh ginger in combination with the coconut aminos to sub for the miso dressing for the viral cucumber salad
- rice noodles– love these for a light gluten free option.
- chili oil– I get it from trader joe’s, but most stores are carrying it now in a different brand
- coconut aminos/soy sauce
The Prep:
I did make the meatballs in my air fryer to get them nice and crispy and to save time, but you can cook them in the oven if you don’t have an air fryer.
- Preheat the oven or air fryer to 400°
In a bowl mix together the turkey, green onion, cilantro, sriracha, garlic, lime juice, sesame oil and salt. Roll mixture into 1½ inch meatballs (you want to get 12 total).
***If you don’t like spicy, you can skip the sriracha and jalapenos or add only 1 tbsp of siracha.
- On a baking pan or air fryer tray, lined with parchment paper, line up the meatballs and then top with 1 slice of jalapeno (optional). Bake in the oven on the top rack or in the air fryer for about 10-15 minutes. Make sure each meatball is cooked to temperature at 165℉.
- While the meatballs are cooking, make the rice noodles according to the instructions on the box and make the cucumber salad.
In a bowl mix the cucumber + peppers with sesame oil, chili oil, ginger + coconut aminos.
**this chili oil is not the spicy at all, more garlicky than anything.
- Once the meatballs are done and cooled down add 3 meatballs into each container with 3/4 cup of rice noodles + 1 cup of the cucumber salad.
- Pour leftover juice from the salad over the noodles + a little exrta chili oil if you like.
- Store in the fridge for up to 5 days!
- To reheat this, just take the cucumber salad out and place it on the lid of your container while you heat up the meatballs and noodles for 1:30 in the microwave.
Tips for this Meal Prep
I prepared this Meal Prep in 1 Hour with the BLT Breakfast Sandwiches. Here are a few things i did to get it done in just an hour!
- Get the eggs into the oven and then cook the bacon, toast the english muffins + make the rice noodles
- when the bacon is done start making the meatball mixture and get those into the air fryer or the oven.
- If you are using the oven and the eggs aren’t done yet, just put the meatballs into the oven on the top rack and then turn the oven up to 400 when the eggs are done. You can totally cook them both at the same time to save time!
- While the meatballs are cooking, chop the cucumbers and peppers, add in the sauces to make this into a salad and set aside.
- As the meatballs cool down, put away the blt breakfast sandwiches.
- Last thing to do is add the meatballs into the contianers with the noodles + cucumber salad.

Equipment
- Air Fryer optional
Ingredients
- 1 lb ground turkey or chicken
- 1 diced green onion
- juice of ½ 1 lime about 1 tsp
- 1 tbsp chopped cilantro
- 1 tsp sesame oil
- 1-2 tbsp sriracha sauce
- 1 tsp minced garlic
- ½ tsp salt
- ***if using 90% lean turkey or chicken add 1 egg to mixture
- 1 sliced jalapeno for topping the meatballs
Noodles + Cucumber Salad:
- 2 cups sliced cucumber
- 2 cups sliced mini bell peppers
- 1 tbsp sesame oil
- 1 tbsp coconut aminos
- 1 tsp fresh grated ginger
- 1 tbsp chili oil see picture above
- 7 oz rice noodles about 3 cups cooked
Let's Make It
