Crunchy Chili Oil Crusted Sweet Potato + Brussels Sprout + Chicken Sausage
This one pan meal is so easy to make- sweet potatoes + brussels sprouts roasted to perfection with hint of spice and garlic from the crunchy chili oil, you’ll love this!

Is it ever too early in the fall season to start cooking brussels sprouts?
Ok look I know it’s onlt september, but I am a sucker for brussels sprouts. I could eat them all year long….actually I do.
I love this time of year and all of the yummy food that comes along with it, so I hope you enjoy brussels sprouts as much as I do because I do plan on sharing a few more recipes this fall/winter featuring this extra STINKY, but yet so tasty vegetable. My husband hates when I cook them, so I am just laughing at while typing that out. But for real, why do they have to stink?!?
Ingredients:
- brussels sprouts
- sweet potatoes
- chicken sausage- any kind will work, I did a jalapeno
- crunnchy chili oil- i get mine at trader joe’s, but the grocery store carries other brands
- olive oil + spray
- salt
Let’s talk about the sheet pan + cooking method
When roasting sweet potatoes, the sugar in the potato cooks down and can get sticky on the pan- that’s why I like using a silicone cooking mat when cooking them! It makes for a super quick and easy clean up- especially when using a Bon Mat. This particular Mat is woven with glass and cooks/roast veggies to perfection, it’s honestly one of my favorite kitchen must haves and great for meal prep! You will save so much clean up time and it will last you for years and years- amazing product!
If you do not have large baking tray, since we are cooking so much at once- you might want to consider using two pans! You will just want to rotate them from the top rack during the cooking process so that they can still get browned and crispy. This is not ideal, but it can be done. Keep in mind- it might take a little longer to cook, that’s why I really suggest investing in better, more efficent cook ware for meal prep!
Tips for this Meal Prep
I made this recipe with the Pizza Stuffed Peppers meal. I was able to cook both of these meals in about an hour- here’s how I did it, step by step!
- I started by chopping the brussels sprouts + sweet poatoes and got those into the oven to roast.
- In the meantime, I chopped the veggies for the peppers, sliced the peppers in half and chopped the chicken sausage.
- I added the veggies into a pan to cook down for just a bit.
- After 20 minutes, I added the chicken sausage onto the pan and continued to cook for another 10 minutes.
- After getting that back into the oven, I blended the cottage cheese and proceeded to stuff the peppers.
- I took the sheet pan out of the oven to cool down while I put away the peppers.
- Once cool- I put away the brussels sprouts and sweet potato meal.

Crunchy Chili Oil Crusted Sweet Potato + Brussels Sprout + Chicken Sausage
Ingredients
- 16 oz brussels sprouts cut in half
- 2 large sweet potatoes- diced about 2½ cups
- 3 tbsp crunchy chili oil
- 1 tbsp olive oil
- ¼ tsp salt
- olive oil spray
- 12 oz chicken sausage 4 links
Let's Make It
- Preheat the oven to 425°
- Chop the sweet potatoes + brussels sprouts
- Using a LARGE silicone lined tray or a tray lined with tin foil- add 3 tbsp of the crunchy chili oil + 1 tbsp of olive oil to the bottom of the tray.***if you have a smaller tray, you might want to use two trays and roatate them from the top rack a few times during the cooking process.
- Add the chopped brussels sprouts + sweet potatoes to the tray and season with salt- spray just one layer of olive oil over the top of the veggies so that the brown in the oven.
- Place the tray into the oven on the 2nd to top rack for 20 minutes.
- In the meantime chopp the chicken sausage.
- After 20 minutes pull the veggies out of the oven and add the chicken sausage to the pan- roast for another 10 minutes or so or until the sausage is browned and the veggies are tender,
- Once cool- divide the veggies + sausage into 4-5 containers
- Store in the fridge for up to 4 days!
- Reheat for 1:45 in the microwave- top with a fried egg if desired
