Ingredient Highlights
Ground chicken keeps this recipe lighter while still providing plenty of protein. If you have ground turkey on hand, it works just as well.
Lo mein noodles are my favorite choice because they soak up the sauce beautifully and give the dish that classic takeout-style texture. Ramen noodles, spaghetti, or rice noodles can also be substituted if needed.
The sauce strikes the perfect balance of sweet and savory. If you’re looking to reduce calories or simply prefer a less sweet flavor profile, you can reduce the honey or leave it out altogether. The hoisin sauce and aromatics still provide plenty of flavor.
Fresh vegetables add color, texture, and nutrition. This is also a great clean-out-the-fridge recipe if you have extra broccoli, mushrooms, snap peas, cabbage, or bell peppers that need to be used.
Skillet Option
Don’t have time to wait for the crockpot? This recipe works beautifully in a large skillet and can be on the table in about 30 minutes. It’s one of those versatile dinners that adapts to whatever your schedule looks like that day.
Storage and Leftovers
This recipe stores well in an airtight container in the refrigerator for up to 4 days, making it ideal for meal prep lunches throughout the week.
If you’d like to freeze it, freeze only the chicken and sauce mixture. Prepare fresh noodles when you’re ready to serve for the best texture.
