For the Crockpot 2 lbs ground chicken 1 small yellow onion diced 1 red bell pepper thinly sliced 2 cups broccoli florets 1 cup shredded carrots 4 cloves garlic minced 1 tablespoon fresh ginger grated Sauce ½ cup low-sodium soy sauce or coconut aminos ¼ cup honey optional 2 tablespoons rice vinegar 2 tablespoons hoisin sauce 1 tablespoon sesame oil 1 teaspoon sriracha optional ½ cup chicken broth 2 tablespoons cornstarch
Brown the ground chicken in a skillet and drain excess liquid.
Add chicken, onion, bell pepper, broccoli, carrots, garlic, and ginger to the crockpot.
Whisk together all sauce ingredients and pour over the chicken mixture.
Cook on LOW for 3-4 hours or HIGH for 1½-2 hours.
Cook lo mein noodles according to package directions.
Stir noodles into the crockpot and toss until coated.
Top with green onions and sesame seeds before serving.
