Ingredients
  

For the Crockpot

  • 2 lbs ground chicken
  • 1 small yellow onion diced
  • 1 red bell pepper thinly sliced
  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated

Sauce

  • ½ cup low-sodium soy sauce or coconut aminos
  • ¼ cup honey optional
  • 2 tablespoons rice vinegar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha optional
  • ½ cup chicken broth
  • 2 tablespoons cornstarch

Noodles

  • 8 ounces lo mein noodles

Garnish

  • Green onions
  • Sesame seeds

Let's Make It
 

  • Brown the ground chicken in a skillet and drain excess liquid.
  • Add chicken, onion, bell pepper, broccoli, carrots, garlic, and ginger to the crockpot.
  • Whisk together all sauce ingredients and pour over the chicken mixture.
  • Cook on LOW for 3-4 hours or HIGH for 1½-2 hours.
  • Cook lo mein noodles according to package directions.
  • Stir noodles into the crockpot and toss until coated.
  • Top with green onions and sesame seeds before serving.
