Tips for this Meal Prep

I made these Meatballs with the  Apple Pumpkin Baked Oatmeal and I was able to knock the whole meal prep out in just about an hour! Here is how I did it!

  • start by chopping your apples and making the oatmeal mixture
  • Get the oatmeal into the oven and chop your onions + mushrooms.
  • Make the meatball mixture and fry those up in a pan.
  • While the meatballs are cooking, start to boil your noodles.
  • After the meatballs are done, remove them from the pan and start the sauce.
  • Take the oats out of the oven to cool down.
  • Put away the meatball meal and start the clean up.
  • The oats make take a while to cool down, but just throw the lid on a little later.

Country Chicken Meatballs

Satisfyingly Healthy: Chicken Country Meatballs with Mushroom Sauce Recipe for Wholesome Meal Prep

Ingredients
  

For the Meatballs:

  • 1 lb ground chicken turkey or beef would be great too
  • 2 tbsp bread crumbs + 1/4 cup for rolling
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp oregano
  • 1 tsp dried or fresh parsley
  • ¼ tsp thyme
  • ½ tsp garlic powder
  • 1 tsp minced onion
  • 2 tbsp coconut aminos

For the Sauce:

  • 2 cups sliced mushrooms
  • ¾ cup chopped yellow onion
  • 1 tbsp olive oil
  • 12 oz beef bone broth
  • 1 tsp minced garlic
  • tbsp cornstarch or more for a thicker sauce
  • ½ tsp salt to taste
  • 3 oz of your favorite pasta noodle about 3 cups of cooked noodles

Let's Make It
 

  • Boil your noodles and set aside.
  • In a large mixing bowl, combine the ground turkey, egg, parsley, oregano thyme, salt, pepper, minced onion, garlic powder, and Italian breadcrumbs. Mix well until all ingredients are evenly distributed. 
  • Shape the mixture into meatballs of your desired size (I did 3 per meal), then roll each meatball in the additional breadcrumbs for an outer layer.
  • In a skillet over medium heat, add a drizzle of oil. Once the oil is hot, place the meatballs in the skillet and cook until they are browned on all sides and cooked through, usually for about 10-12 minutes. 
  • Take the meatballs out of the pan, heat 1 tablespoon of olive oil over medium heat. Add the diced yellow onion and sliced mushrooms. Sauté until they are softened and golden brown.
  • Sprinkle the cornstarch over the sautéed vegetables, stirring constantly for a minute to cook out the raw taste of the cornstarch.
  • Gradually pour in the beef bone broth, stirring continuously until the sauce thickens to your desired consistency. I left the sauce a little more runny than usual so that the noodles would soak up the flavors once added to the meal prep containers.
  • Season the sauce with salt and pepper according to your taste preferences. 
  • Add your preferred noodles, place the cooked meatballs on top, and generously ladle the mushroom sauce over the meatballs and noodles. Garnish with fresh parsley for a burst of color and added freshness.
  • Store in the refrigerator for up to 4 days!
  • To reheat, cook in the microwave for 1:45
