The key to this meal is making your own tostadas! They are so simple to make and really just elevate this dish so much!

These are also totally customizable! You can use whatever toppings or salsa you want to make these your own or to use up ingredients you already have!

Ingredients:
salmon- wild caught is best. If it still has the skin on, don’t worry, it will flake right off when cooked.
street taco size tortillas- they are just easier to manage, but use what you have
southwest chipotle seasoning- I use Ms. Dash, you can use taco seasoning or whatever you like!
olive oil
avocado
mango- fresh or frozen (easier)
cilantroÂ
red onion
jalapeno
lime
juice

Salmon is a higher (healthy fat) meal and eating this with a corn tortilla definitely does add a few extra calories. I suggest using the olive oil spray instead of olive oil, using a low carb tortilla or maybe throwing this in a bowl with cauliflower rice!

Making fresh tostadas is so simple!

I like using the street taco size tortillas, drizzling some olive oil on both sides and roasting the on the top rack of the oven for 5-10 mins.

You can use olive oil spray- this uses less oil, which will make these lower in calories. Using the spray allows for a thinner layer of oil to be evenly distributed all over the tortillas.
The key to the success of this recipe lies in its simplicity. By baking the salmon in the oven with a southwest Chipotle seasoning, you’ll achieve perfectly tender fish every time. No need to worry about overcooking or undercooking – just pop it in the oven and let it work its magic while you prepare the rest of the meal. Meanwhile, the homemade tostadas, baked to crispy perfection in the oven, provide the ideal base for all the flavorful toppings. Smashed avocados add creaminess while a squeeze of lime juice adds a refreshing zing that complements the rich flavors of the salmon and mango salsa. Speaking of which, let’s talk about that mango salsa- it pairs so well with the smokiness of the chipotle and brings with whole dish together!

I started this series for all the busy moms (or dads) who appreciate a yummy meal and are maybe tired of the same weekly dinner rotation- to bring them fresh ideas that aren’t going to take too much time or use a ton of ingredients!

Chipotle Salmon Tostadas + Mango Salsa
Smokey roasted salmon over fresh tostadas, topped with avocado + mango salsa- this meal comes together in less than 30 minutes!

Ingredients
- 12 street taco size corn tortillas
- 1 1/2 - 2 lbs salmon
- 1-2 tbsp southwest chipotle seasoning or your favorite taco seasoning to taste
- 3 tbsp olive oil use olive oil spray to make this lighter in calories
- 1 1/2 cups chopped mango fresh or frozen
- 3 tbsp chopped cilantro
- 3 tbsp chopped red onion
- 1 jalapeno diced
- 1 1/2 avocados mashed
- 2 tsp lime juice
Let's Make It
- Preheat the oven to 425℉
- On a large baking tray, drizzle one tsp of olive oil. Place the tortillas on the tray- making sure each one of them gets coated in olive oil on the bottom. Drizzle a little more olive oil over the top, rubbing it in so that each tortilla is coated. ***you can use an olive oil spray to save on calories
- Cook the tortillas on the top rack of the oven for 5-8 minutes or until browned and crispy.
- In the meantime, wash + pat dry the salmon. Lay it flat on a baking tray and season with southwest chipotle seasoning, drizzle with 1 tsp of lime juice + 1 tbsp of olive oil.
- Once the tortillas are done, add the salmon into the oven on the top rack and cook for 10-15 minutes or until the salmon is cooked all the way through (145℉).
- While the salmon is cooking, toss together the mango, cilantro, onion + jalapeno in a bowl.
- Add the smashed avocado to each tortilla, top with the salmon, fresh lime juice + as much mango salsa as you want! Enjoy!
- You can serve this meal with a side salad, grilled veggies, rice + beans or maybe even add some cabbage to each tostada!
