Carrot Cake Trifle Cups

I’m so excited to share these carrot cake trifle cups because they’re one of my favorite spring desserts—and it came out SO good.

Baking this time of year just feels different. We’re getting ready for Easter, the weather is starting to warm up, and I always find myself back in the kitchen making something fun and a little extra special.

Some of my favorite memories with my kids are baking together this time of year. Even though they didn’t make it into this video, this is exactly the kind of recipe we’d usually make together—simple, a little messy, and so good.

I stopped by Target to grab my baking staples and picked up my go-to Florida Crystals® regenerative sugar.

Ingredients
  

Carrot Cake

  • 2 cups grated carrots
  • 2 cups all-purpose flour
  • 1 cup Florida Crystals® Regenerative Organic Raw Cane Sugar
  • 1 cup Florida Crystals® Regenerative Organic Light Brown Sugar
  • 1 cup avocado oil or melted coconut oil
  • 4 eggs
  • 2 tsp vanilla extract
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • ½ tsp ginger optional
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 2 tbsp apple cider vinegar
  • 1 cup chopped pecans optional

Cream Cheese Frosting

  • 8 oz cream cheese softened
  • 8 tbsp butter softened
  • 2 cups Florida Crystals® Powdered Sugar
  • 2 tsp vanilla extract
  • Pinch of salt
  • Optional: 1 cup whipped cream

Let's Make It
 

  • Preheat oven to 350°F and prepare a 9x13 pan
  • Mix dry ingredients
  • Mix wet ingredients with Florida Crystals® sugars
  • Add carrots and vinegar
  • Combine wet and dry ingredients
  • Bake 25–30 minutes
  • Cool and crumble
  • Make frosting
  • Layer cake, frosting, and pecans into cups
